J-Man has gone to camp a lot this summer and one of his favorite activities was making S’mores over the campfire. And since I’m not the roughing it type of gal who can go outside and whip up a campfire in our front yard, I decided to bring the S’mores goodness inside with a yummy S’mores inspired cupcake treat! Now, if you know me, you know that I go simple! So this recipe is easy, fun and your kids are sure to adore it!
S’mores Easy Cupcake Recipe
What You Will Need
1 Box of Yellow Cake Mix
1 Cup Water
1/2 Cup Vegetable Oil
Marshmallow Icing Mix
How to Make It
Start by making your cupcakes. Mix your yellow cupcake mix with the water, vegetable oil and eggs and mix well. Then spoon the mixture into lined cupcake tins. A trick I love to use is using a ice cream dipper to put the mix in the tins. It creates less of a mess and helps you make uniform sized cupcakes!
Now, place your cupcakes in the oven and cook for about fifteen minutes or until done. Remove them from the oven and set them aside to cool. While they are cooling, mix up your icing. I found plain icing and chocolate marshmallow icing mix to create a decadent topping that fit right in with the S’mores theme. You can use plain icing here too if you can’t find the marshmallow mix. Place your prepared icing into an icing tube and generously ice your cupcakes.
Now, it’s time to turn them into S’Mores. Place a graham cracker and Hershey bar in the top of each cupcake, pushing it down so that it is secure but sticks out the top. Now place marshmallows around the Hershey and graham cracker, making sure that they are pressed firmly into the icing to prevent them from falling off. And ta-dah! You have amazingly cute S’mores cupcakes that the kids are sure to adore!
