Valentine’s Day is sneaking up on us quickly. And I know that the way to my man’s heart is through his tummy. So, with that in mind, I wanted to create a super special cupcake that would not only thrill his taste buds but also be a perfect Valentin’e Day greeting – in the form of food.
I thought of a few of his favorite things – chocolate, raspberries and cream cheese icing and decided that a raspberry filled cupcake would be just the way to go. And surprisingly enough they were fairly simple to make! Here’s how you can say Happy Valentine’s Day with a delicious cupcake this year too!
Raspberry Filled Devil’s Food Cupcakes with Cream Cheese Icing Recipe
What You Will Need:
For the Cupcakes:
1 Box of Devil’s Food Cake Mix
1 2 ounce Box of Chocolate Jell-O
1 Cup of Sour Cream
1/2 Cup Vegetable Oil
1/2 Cup Water
For the Raspberry Filling:
1 Bag of Frozen Raspberries
1/2 Cup of Sugar
1 teaspoon of Vanilla Extract
3 Tablespoons of Corn Starch
For the Cream Cheese Icing:
2 8 Ounce Packages of Cream Cheese
1 Stick of Butter
1 teaspoon of Vanilla Extract
2 Cups of Confectioners Sugar
How to Make Them:
Start by making your cupcakes. Mix your cake mix, Jell-O, sour cream, water, oil and eggs together and beat on low speed until your batter is smooth. Then fill your lined cupcake tins about half way full of batter. Cook them on 350 degrees for 18 minutes or until you can insert a fork into them and it comes out clean. Once the cupcakes are cooked, set them aside to cool.
While your cupcakes are cooking, make your raspberry filling. Do so by adding your frozen raspberries to a pot and barely covering them with water. Then boil them for 15 minutes. Using a fork, mash them up a little while they are boiling to prevent big chunks from being left behind. Once they are an even consistency, mix in your sugar, vanilla extract and corn starch.
Pour your raspberry mixture into a bowl and set it in the refrigerator to chill for about 2 hours. This will allow it to continue to thicken, making it easier to fill the cupcakes with.
While you are waiting for it to chill, beat together your softened cream cheese and butter until it is a smooth consistency. Then mix in your vanilla extract. Slowly add in your confectioners sugar and beat it on low to mix it all together. You will end up with creamy icing that looks like this.
You now have all your ingredients made and are ready to put your cupcakes together! To do this, simply cut a small round area out of the top of your cupcakes. This is easy to do with a paring knife. Just go around the circumference of the cupcake about a half an inch from the outer corners. Hold your knife at an angle so the blade is pointing to the middle of the cupcake. Then pop the cut out portion out!
Using a spoon, fill the hold with raspberry filling.
Once you have added your filling, take the piece you cut out of the cupcake and cut the point off. This will make it a flat piece that you can place back on top of the filling. Push it down gently so as not to make the filling squeeze out but to make the cupcake whole again.
Now your cupcake is filled and your ready to ice! Fill an icing back with your cream cheese filling. I use a large round tip because I wanted the icing to have a fluffy look. Then, starting at the outer edge, ice your cupcakes in a round circle.
Once all your cupcakes are iced, top them with a light sprinkle or red sugar sprinkles for a special look.
Your cupcakes are now ready to serve! They will look beautiful on the outside and when eaten will provide just the right combination of sweet and tangy thanks to the raspberry filling!
