One of the hubs favorite food groups is seafood but what he really loves the most is shrimp. However, I don’t make it very often because it can be super time consuming to peel, de-vein and the cook it. But I recently found an old Shrimp Scampi recipe that I wanted to try out. And by using pre-peeled shrimp, I was able to have dinner on the table in 20 minutes! And it turned out being a date night worthy dish that tasted like it took much longer to prepare! Here’s how you can make it too!
What You Will Need
1 Pound of Peeled and De-veined Shrimp
2 Tablespoons of Unsalted Butter
2 Teaspoons of Minced Garlic
1/4 Cup of White Cooking Wine
2 Tablespoons of Lemon Juice
1/2 Teaspoon of Spicy Red Pepper
1 Teaspoon of Parsley or Italian Seasoning
Salt and Pepper to Taste
Parmesan Cheese for Topping
How to Make It
Start by melting your butter in a saute pan on the stove. Then add in your shrimp and garlic.
Cook your shrimp until they turn pink and most of the butter dissolves and then move them to another bowl. Return your pan to the burner and pour in your white wine and lemon juice. Allow it to come to a boil to thicken. Then mix in your spicy red pepper and Italian seasoning. Mix it together well until if forms a sauce (will be thin but sauce like).
Once your sauce is done, pour it over the top of your shrimp and mix it together well. Add salt and pepper to taste.
Now serve your shrimp scampi over pasta and top with a sprinkling of Parmesan cheese if you would like.
