Yes, you read that right. My guys are not huge fans of Chicken Pot Pie. Every time I fix it, they leave the majority of the food on their plates and tell me how they are not hungry. But, as a mom, it’s a great way to fix a meal that has meat, veggies and carbs all rolled into one. So, this last week I sat out on a mission to turn Chicken Pot Pie from something they hated to something that left them running for more. And my solution? Why Chicken Pot Puffs of course! Every member of the family loved them and has asked to have them again! So, if you need to disguise your pie, try out this fun way to puff up the fun!
What You Will Need
1 Can of Pillsbury Grands Flaky Layers Biscuits
1 Package of Steamfresh Mixed Veggies
2 Large Chicken Breasts
1 Can of Cream of Chicken Soup
1 Cup of Cheese
How to Make Them
Start by dicing up your chicken and cooking it until all the pink disappears. You will want the pieces to be bite size so that they will fit well into the puffs. At the same time, microwave your Steamfresh veggies and empty them into a bowl. Mix in your chicken and cream of chicken soup and stir together well. Now you’re ready to assemble your puffs!
Start by taking each biscuit and rolling it out. You can either use a rolling pen or your fingers to stretch it but make sure it is stretched as large as you can get it to go with out creating holes in it.
Next, place a spoonful of your chicken and veggie mixture into the center of your biscuit. Top it with a sprinkling of cheese.
Now, pull the sides of your biscuit up around the stuffing. You may have to push it in a little but you can get the biscuit to stretch around it. Then pinch it at the top to form a puff pouch.
Once all your puffs are made, back them at 350 degrees for about 15 minutes.
Once they are done, sprinkle cheese over the top and let it melt.
Then serve them warm to your waiting family! They are sure to love these delicious little treats that pack a major flavor punch!
