With Easter only a few weeks away (eek!) I figured it was time to pull out the apron and get to baking some Spring themed treats. And while there are so many cute ways to make Easter sweet, cupcakes seem to be my boy’s favorite! I love that creating cute cupcakes allows me to have delicious treats that are the perfect size for their little hands and they love that they get something extra special. So, this weekend I put together a cute little cupcake that is sure to get you in the Spring Spirit – Robin’s Nest Cupcakes! Here how you can make them too!
What You Will Need
For the Cupcakes:
1/2 cup butter, softened
1 cup white sugar
1 teaspoon vanilla extract (or vanilla bean paste)
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 Tablespoon of Sour Cream
For the Topping
Homemade or Store Bought Icing
Green Food Coloring
1 Chocolate Bar (shaved or grated)
Chocolate Bird Eggs
How to Make It
Start by preparing your cupcake batter. Cream together your butter and sugar and mix in your egg and vanilla. Them alternate mixing in your flour, baking powder, salt, sour cream and milk. Combine it all well until you have an even consistency dough. **Note: this created an angle food cake like cupcake and the sour cream makes it super moist.**
Pour you mix into spring themed cupcake molds (I found these green spotted ones at AC Moore for $1.99).
Bake them at 350 degrees for 15 to 20 minutes and them remove them and allow them to cool completely. Once they are cool, you’re ready to start decorating! Begin by mixing your green food coloring in with your icing. Then add it to a piping bag with your preferred tip. I used a textured tip as I wanted to create a grass look. Using your icing bag, ice your cupcakes.
Once they are fully iced, take your shaved chocolate and sprinkle in in the middle of the icing, creating a little bit of the look of a nest. Don’t worry if it doesn’t look perfect – once you add the eggs you’ll see how the final product comes together!
Finally, add a few eggs into your nest on each cupcake!
Now, you’re ready to celebrate Easter or welcome Spring with a cute cupcake that the whole family is sure to love!
