Do you have comfort foods that you just crave when you’ve had a bad day or maybe when you’re not feeling great? Mac & Cheese has always been a favorite of mine and I passed that love on to my boys. So when they’ve had a rough day, when they need a little pick me up or when I just want to say I love you through food, I make them Mac & Cheese. But over the years, as I’ve experimented, I’ve discovered that all Mac & Cheese is not the same. And for my family, only buttermilk mac & cheese will do! Here’s how you can make it too!
What You Will Need
1 Box of Pasta of Your Choice
2 Tablespoons of Butter
2 Tablespoons of Flour
2 Cups of Buttermilk
1 and 1/2 Cup Cheddar Cheese
How to Make It
Start by boiling your noodles according to the directions on the box. While they are boiling, you will need to make your cheese sauce. Start doing this by melting your butter in the bottom of a sauce pan. Then mix in your flour. It is very important to keep your heat on medium and NOT let the butter burn. This will happen quickly. You will only need to mix together your butter and flour for about a minute until it takes on a paste like consistency.
Slowly mix in your buttermilk – about a half a cup at a time and stir slowly until your mixture thickens. Don’t add more milk until your current ingredients have thickened well! Repeat this process until you have added the entire two cups.
Now, you’re ready to add in your cheese! Pour it all in and turn down your heat. Stir your mixture slowly allowing the cheese to melt completely.
Once your cheese sauce is complete, all that’s left to do is mix in your cooked pasta! Be sure to stir it well to ensure that your cheese sauce covers the pasta completely and you’re ready to serve your delicious, tasty made from scratch buttermilk mac & cheese!
The great thing about this dish is that it’s great to make in bulk, allowing you to have a special comfort food treat for your family to enjoy for days!
