You all know that over the last year I’ve been working on living a healthier lifestyle. From going to the gym to changing what I eat, I’ve been trying to modify my lifestyle in everyday ways. However, this does not mean that I want to give up taste! In fact, I want the items I eat to be even bolder tasting than they were before. And one way I’ve been able to accomplish that is through black bean and avocado salad! It’s great eaten alone, with crackers and even on a bed of lettuce! Here’s how you can make it too!
What You Will Need
1 Can of Black Beans
1 Can of Rotel Tomatoes
1/4 Cup of Artichoke Hearts
1 Small Yellow Pepper
1/2 Onion
1 Ripe Avocado
4 Ounces of Fresh Mozzarella Cheese
2 Tablespoons of Red Wine Vinegar
1/4 Cup of Olive Oil
1 Lime
Mrs. Dash Spicy Seasoning
How to Make It
Add your black beans to a large bowl. Then dice up your artichoke hearts, pepper and onion. Add your can of Rotel tomatoes and mix it together well.
Next add your Mrs. Dash’s Spicy Seasoning. You can add as much or little of this as you like depending on how spicy you want your bean salad to be. Then mix together your red wine vinegar and olive oil as well as the juice from your lime. Pour it over the top of your mixture and toss gently to coat.
Now you’re ready to add your finishing touches to make things extra tasty! Cut your mozzarella cheese and avocado into small cubes and add them to your salad. You can mix the in or leave them on top. Chill your salad for about 30 minutes to allow time for all the flavors to set. Then serve it cold with crackers or pita wedges for a lunch that is sure to leave you satisfied!
