With Thanksgiving and Christmas on the way, I’m testing out tons of new recipes to take with me to parties, events and family gatherings. And while I do have my tried and true favorites, this year I’m all about the pumpkin! Now, in the past I’ve always made pumpkin pies but I thought this would be a good year to mix things up a little – to create fun treats that don’t need a fork but have plenty of pumpkin taste! Since both my boys LOVE thumbprint cookies, I decided to turn their favorite fun treat into a total holiday classic! Here’s how you can do it too!
What You Will Need
1 Cup of Butter (Softened)
1 Cup of White Sugar
1/2 Cup of Brown Sugar
1 Teaspoon of Vanilla Extract
1 Teaspoon of Baking Soda
1 Teaspoon of Baking Powder
5 Ounces of Pumpkin Puree
3 and 1/2 Cups of Flour
1/2 Teaspoon of Salt
1 Tablespoon of Pumpkin Spice
1/2 Teaspoon of Cinnamon
8 Ounces of Cream Cheese
2 Tablespoons of Lemon
How to Make It
Start by creaming together your butter, 1/2 cup of your white sugar and all of your brown sugar.
Once they are well blended, mix in your vanilla, eggs and pumpkin. Continue to blend your mixture until all ingredients are uniform. Next, add in your baking soda, baking powder, salt, pumpkin spice and cinnamon. Finally, add in your flour a little at a time, blending well to create your dough. The dough will be a little thicker than what you’re probably used to and that exactly how you want it!
Once your dough is ready, pull off small pieces and roll them into balls, placing them on a greased cookie sheet. Now, you could totally stop here because these would make awesome Pumpkin Spice Cookies as they are. But you know I have to always add a little something. And they wouldn’t be thumbprint cookies if they were left like this.
So, using your thumb (or any other finger really) press gently in the middle of your cookies to form a nest like shape.
Now, you’re ready to mix up your cream cheese filling! Pop your cream cheese into the microwave for long enough to soften it (30 seconds will do) and then mix in your lemon and 1/2 cup of sugar. Combine all the ingredients well and then spoon them into a icing bag with a large tip. Next, fill each of your thumbprints with the cream cheese mixture!
Now you’re ready to bake those delicious little cookies!
Pop them in the oven for 15 minutes at 350 degrees and wa-la! You’ve got a delicious, decedent, fall-themed treat that will be the hit of any dinner, event or celebration!
