You all know I’m totally not a morning person. So when I find a treat that makes it worth my while to get out of bed – well, that’s something I can get excited about. And while I don’t usually have time to cook breakfast during the week, this weekend treat is perfect to make ahead and freeze, ensuring that I have a delicious breakfast for myself and my family anytime I need it! So, what delightful breakfast am I talking about? Why Banana Nut Chai Muffins of course! With a delicious banana flavor and the added heath benefit of chai seeds, this is a breakfast I’m sure you won’t be able to get enough of!
What you Will Need
1 Cup of Sugar
½ Cup of Coconut Oil
3-5 Over Ripe Bananas (mashed) *you can microwave regular ripe peeled bananas for 1-3 minutes to give them the over ripe texture, and bigger flavor
2 Cups of Flour
1 Teaspoon of Baking Soda
Dash of Salt
½ Cup of Chopped Walnuts
¼ Cup of Chia Seeds
How to Make It:
Preheat your oven to 350 degrees. Then grease the muffin pan or use liners/cupcake papers. Next, combine the sugar, coconut oil and egg until creamed. Mix in the mashed over ripe bananas, nuts and chia seeds.
Slowly start to mix in the flour, baking soda and salt. Stir until your ingredients are just combined (try not to over stir). Once your batter is ready, spoon or scoop it into the muffin pans trying for even amounts in each.
Bake your muffins for 22 to 26 minutes, checking with a tooth pick around the 20 minute mark to see how they are coming along – and again when you think the time is up. Remove the muffins from the tin right away and let them rest for a few minutes before serving.
