1/2 Cup of Plain Greek Yogurt (Superfood)
1 Teaspoon of Vanilla Extract
2 Eggs (Superfood)
1/3 Cup of Quaker Oats (Superfood)
3/4 Cup of Blueberries (Superfood)
3/4 Cup of Diced Strawberries (Superfood)
1/2 Cup of Walnuts (Superfood)
How to Make It:
In an electric mixer, blend together your oil, yogurt, vanilla extract and eggs. Once they are well combined, mix in your cooked quinoa, flours, brown sugar, baking soda and salt. Once you have created a batter, turn your mixer down to low and slowly mix in your oats. When all ingredients are well combined, turn off the mixture and gently fold in your blueberries, strawberries and walnuts by hand. Spoon your mixture into ramekins or greased cupcakes. Sprinkle a small amount of brown sugar and a few or your remaining walnuts on top and cook at 350 degrees for 20 minutes or until a toothpick comes out clean when inserted in the middle. Allow your dish to cool slightly and then serve it while it is still warm.
