Ready for Easter? If your home is anything like ours, you’re smack dab in the middle of Easter egg hunts and tons of celebrations. Over the next week we’ll be having school parties, family gathering and tons of events! And I plan to make them extra special with some super adorable cupcakes! You see, I’m a very visual person and while taste is important, the way something looks is what really draws me in. Thankfully I can have both delicious and adorable cupcakes with the recipe I’m about to share! I can’t wait for you to try them out for your amazing Easter Celebrations!
What You Will Need
For the Cupcakes:
1/2 cup butter, softened
1 cup white sugar
1 teaspoon vanilla extract (or vanilla bean paste)
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 Tablespoon of Sour Cream
For the Icing
½ Cup of Unsalted Butter
Dash of Salt
1 Teaspoon of Vanilla Extract
3 Cups of Confectioners’ Sugar
2 to 4 Tablespoons of Milk

How to Make Them
Start by preparing your cupcake batter. Cream together your butter and sugar and mix in your egg and vanilla. Them alternate mixing in your flour, baking powder, salt, sour cream and milk. Combine it all well until you have an even consistency dough. **Note: this created an angle food cake like cupcake and the sour cream makes it super moist.**
Pour your cupcake mixture into lined tins and bake them at 350 degrees for 15 to 20 minutes and them remove them and allow them to cool completely.
While they are cooling, make your candy ducks to place on the top.
Following the direction on the back of your chocolate, melt it in the microwave. Then use your orange and black to fill in the beak, feet and eyes in your candy mold. Allow those two areas to cool and then fill the remainder of your mold with yellow chocolate, tapping the mold gently to remove any air bubbles. Place your molds in the fridge to cool completely and then pop your ducks out gently and put them aside till you are ready to use them!
Once your ducks are made and your cupcakes are cool, you’re ready for your icing!
Place your room temperature butter in a mixer and whip it until it is fluffy. Then add salt and vanilla and mix it together until well combined. Add your confectioners’ sugar one cup at a time, mixing it well in between each cup. Once all your confectioners’ sugar is mixed in, add two tablespoons of milk and mix them in well. If your icing is not moist enough yet, add additional tablespoons of milk, one at a time, until you reach the desired consistency. But remember, you don’t want your icing to be runny! If for some reason, you add too much milk, simply add a little more confectioners’ sugar to stiffen it back up.
Once your icing is ready and your cupcakes are cooled, pipe your icing onto your cupcakes using a star tip. Then gently place your candy duck on the top.
