I know how busy weekdays can get. In fact, in the craziness of everyday life I often forget to eat lunch…or I grab something that’s not so great. In an effort to take better care of ME, I’ve been working on adding meals to my busy schedule that are both easy and delicious. That way, no matter how busy my day gets, I can take time to sit down and recharge.
Recently I’ve just fallen in love with chicken salad. It’s quick, can be made in bulk and absolutely delicious. But the thing I really love doing with chicken salad is adding in bursts of flavor to take it from good to great. So when I recently discovered that a little bit of dill and a few pistachios could transform my lunch time experience, I had to share!
Now, I’m going to warn you, this salad is so good you’ll want it every single day! So get ready to discover you new favorite lunch and then get to cooking!
What You Will Need:
2 Cups of Chopped Rotisserie Chicken
1/3 on a Diced Sweet Onion
3 Tablespoons of Cilantro
1 Diced Kosher Dill Pickle
1 Tablespoon of Dill Pickle Juice
1/4 Cup of Diced Bell Peppers
2 Tablespoons of Lowfat Mayonnaise
1/4 Teaspoon or Red Pepper Flakes
1 Container of Herb Salad Mix (Regular Salad will work as well)
1 Avocado (Diced)
1/4 Cup of Pistachios
How to Make It:
Chop up your chicken, onion and bell peppers. If you prefer softer veggies, you can saute the onion and bell peppers. Then mix in your cilantro, pickle, pickle juice, mayonnaise, and red pepper flakes. Combine all ingredients well until they are evenly mixed.
Add your herb salad mix to your place and place your chicken salad on the bed of lettuce. Then top it with diced avocado and pistachios. There is really no need for a dressing with this salad as the chicken salad keeps the lettuce moist.
Then all that’s left to do is enjoy!
