In my home, the holiday break is so totally over. It’s back to the running and craziness of life with two kids and I’ll be the first to admit that because of being gone so much, my family dinners are suffering. After adding quite a few new activities to your youngest’s schedule in the new year, I discovered that if I planned to cook at home, dinner time was going to be quarter past midnight. Unless I pulled out the slow cooker (AKA the crockpot) and go to work. Knowing that I really needed a one dish wonder, I set to work creating a new take on classic lasagna that my family was sure to love!
What You Will Need:
1 Cup of Ricotta Cheese
1/2 Cup of Parmesan Cheese
1/2 Tablespoon Garlic
2 Cups of Cooked and Drained Spinach
1 Cup of Drained Artichoke Hearts
2 Pounds of Ground Turkey
1 Jar of Alfredo Sauce
2 Cups of Mozzarella Cheese
9 Uncooked Lasagna Noodles
How to Make It:
Start by browning your ground turkey. You will want to make sure it is cooked with no pink showing. Then add in your can of Alfredo sauce, stir it in with your meat and let your mixture simmer.
While your mixture is simmering, in a separate bowl, mix together your Ricotta cheese, Parmesan Cheese, Egg, Garlic, spinach and artichoke hearts. Stir your ingredients together gently to combine them well.
Now you’re ready to start assembling your lasagna. Add 1/3 of the meat mixture to the bottom of your crockpot. Top it with uncooked noodles, breaking them where you have to so that the entire area of the crockpot is covered. Then add your spinach mixture and top it with shredded mozzarella cheese!
Repeat this process three more times, with the top layer being the remainder of your mozzarella cheese. Then cook your lasagna for 4 hours on low heat.
Once your lasagna is done, set your crockpot to warm setting and allow it to cool slightly until you are ready to serve it.
This delicious dish has meat, dairy, veggies and grains all in it for a mean that is completely ready when you are. So whip it up, dish it out and enjoy a home cooked meal that doesn’t require you spending all day in the kitchen!
