You guys, week nights are C-R-A-Z-Y in my home. Since my older son joined a second travel ball team and my younger son got involved in gymnastics and swimming, it seems like my afternoons have morphed into the time sucking cycle of drop off, pick up and repeat, repeat, repeat. In fact, with all the back and forth I end up doing daily, I’ve been struggling to get a delicious dinner on the table. Knowing that for me, simple meals at home are essential to my sanity, I decided it was time to find a way to make dinnertime easier!
Now, while I may be short on time most nights, that doesn’t mean that I don’t want to make a fresh and delicious dinner. In fact, cooking our evening meal is one of my ways to de-stress from the day. I just needing to find a way to make my favorite recipes easier. Knowing that most nights I have 30 minutes or less to put dinner in from of my family, I set out to create a quick and easy Mexican recipe that was full of flavor.
To start with, I headed to Walmart to pick up all the ingredients during my weekly shopping trip. I knew that this dish was pretty simple to make for the most part. The only thing I was worried about was taking the time to season the beef correctly to ensure it was full of flavor. As I walked up and down the aisles picking up fresh ingredients, I found myself in the soup aisle staring at the new Campbell’s Soups for Easy Cooking.
With flavors like Savory Portobello Mushroom, Creamy Herb & Garlic with Chicken Stock, Sweet Onion and Mexican Style Tomato I knew they would definitely add flavor to many a meal! But since I wasn’t cooking casseroles anytime soon, I passed on by and headed to the spices. However, as I added spice after spice to my cart, it hit me that I could bypass all the time and effort and season my hamburger meat perfectly with the Mexican Style Tomato Campbell’s Soup for Easy Cooking, which is pretty much perfect for adding flavor quickly to my favorite Mexican meals!
Thrilled with the idea of extra time, I grabbed the container of Campbell’s and headed to the register! It was easy to see that that my cart was not nearly as full as normal but I had no doubt that I would still achieve a huge flavor. Once I had checked out I headed home and started putting together my delicious dinner before having to pick up the kids.
What You Will Need:
1 Pound of Hamburger Meat
1 Container of Campbell’s Soup for Easy Cooking in Mexican Style Tomato
1 Thin Pizza Crust
1 Can of Refried Beans
1/2 Cup of Shredded Cheese
1/4 Cup of Sour Cream
1/2 Packet of Taco Seasoning
Tomatoes, Avocados and Green Onions for Topping (if desired)
How to Make It:
To start, I cooked and drained my hamburger meat. Once there was no longer any pink showing in the meat, I poured in my entire container of Campbell’s Soup for Easy Cooking in Mexican Style Tomato.
Then I mixed the Campbell’s Mexican Style Tomato in with my meat and allowed it to simmer so that the sauce reduced down, creating a warm and flavorful meat mixture that was going to be the focus of my meal. While my meat was simmering, I cooked my pizza crust on 350 degrees until it was warm and crunchy. Once the pizza crust was done, I removed it from the oven and spread on a layer of refried beans.
Next, I topped my refried beans with my perfectly flavored meat mixture. From the aroma as I spread on the meat, I knew that my choice to keep things simple with Campbell’s Soup for Easy Cooking was going to be the right one! I couldn’t finish assembling my pizza fast enough to get that great smelling meal in my stomach!
I used all my self-control to keep from eating my meal right then and there. After all, I really wanted an even taste with flavor in each bite so I took the time to ensure that my mixture was spread evenly over the top of the refried beans to form the perfect base for this delicious dish!
Once my pizza was topped with refried beans and Campbell’s flavored meat, I was ready to get creative and top my Mexican Pizza! I started by sprinkling cheese over the top of the meat, allowing it to melt slightly.
Next, I mixed together my sour cream and taco seasoning and sprinkled it over the top. Finally, I finished my pizza with tomatoes, avocados and green onions for a dinner that looks as good as it tastes!
And that’s it! Since my pizza crust was already cooked, there was no need to do anything additional. I have to say the fresh, cool crunch of my tomatoes and avocados were just the right pairing with the warm and hearty taste of my Campbell’s seasoned meat!
Thrilled with the way my dish looked, I quickly cut it into slices and sat it on the table knowing that dinner was served after less than 30 minutes of cook time!
The end result was a homemade meal that was so easy to make! As I enjoyed bite after bite, I couldn’t believe how perfectly the meat had turned out…and with VERY little effort on my part!
