Are you feeling the luck of the Irish this March? Well if not you’ll at least be tasting it soon with this delicious cake pop recipe! You see, I’ve been searching for ways to make St. Patty’s Day tons of fun in my home and any of you who know me know that means a little something sweet. But this time instead of going for something that’s just kid friendly, I decided it was time for a treat that the kids and adults alike could enjoy! So get ready to get cooking and then try your hand at these delicious St. Patrick’s Day Mint Cake Pops!
What You Will Need:
2 Cups of Sugar
1 3/4th Cups of All-Purpose Flour
3/4 Cups of Cocoa
1 1/2 Teaspoons of Baking Soda
1 1/2 Teaspoons Baking Powder
1 Teaspoon of Salt
1 Cup of Milk
1/2 Cup of Vegetable Oil
2 Teaspoons of Mint Extract
1 Cup of Boiling Water
1 Bag of Cake Pop Sticks (you can get them from Michaels or Walmart)
How to Make It:
Start by preheating your oven to 350 degrees. Next grease a deep cookie sheet. Stir together your sugar, flour, cocoa, baking powder, baking soda and salt in a large bowl. Once it is well combined, add your milk, eggs, oil and mint. Beat your mixture for approximately two minutes and then stir in your boiling water. Finally, pour your mixture onto the prepared cookie sheet and bake your cake for 30 minutes.
Once your cake is done, let it cool in the baking sheet. When it is completely cooled, cut it into big squares and then crumble those squares into a mixing bowl.
Next, you’re ready to mix your frosting!
What You Will Need:
1/2 Cup of Butter
2/3 Cups of Cocoa
3 Cups of Powdered Sugar
1/3 Cup of milk
1 Teaspoon of Vanilla Extract
1 Bag of Chocolate Candy Melts
For the frosting, melt your butter in a mixing bowl. Then stir in your cocoa, powdered sugar and milk, alternating adding a bit of each at a time. Continue mixing until your frosting had reached an even consistency. Once your frosting is smooth, add in your vanilla and stir.
Now you’re ready to assemble your cake pops.
To do this, take a spoon full of the frosting and add it into the crumbled cake. Stir the frosting and cake together gently and continue adding more frosting until you are able to form small balls with your mixture. Form your cake balls and set them aside.
Melt your chocolate in a double broiler (or microwave) and stir it until it is smooth. Then dip your cake pop stick into the chocolate and push it into the bottom of your cake ball.
Once the chocolate on your stick has hardened, dip your cake ball into the chocolate and continue turning until it is fully coated. Allow the chocolate to harden and then decorate your cake pops with green icing or sprinkles.
