How many of you adore Mexican food as much as I do? It’s seriously one of my go to dishes for tasty meals during the week or on the weekend. And while I thought there was no way to improve on my favorite Mexican dishes, I’ve discovered that I was wrong! Because while I love my tried and true recipes, I also love Peanut Butter! And the best of both worlds combine in this delicious recipe! Read on to find out more.
What You Will Need:
1 Pound of Ground Beef
1 Small Yellow Onion, diced
1 Can Chopped Chilies (4 oz.)
1 Can of Tomato Sauce
¼ Cup Creamy Peanut Butter
1 Tablespoon of Chili Powder
2 Teaspoon of Cumin
½ Teaspoon of Salt
½ Teaspoon of Pepper
1 Lime, zest and juice
10 Flour Tortillas
8 oz. Colby Jack, shredded
5 oz. Queso Fresco, crumbled
6-8 Sprigs of Cilantro leaves, chopped
How to Make It:
Start by preheating your oven to 350 degrees. Then brown your beef, onions and chilies in a skillet over medium heat until they are cooked. Drain all moisture from your mixture and set it aside.
In a small sauce pan combine your tomato sauce, peanut butter, chili powder, cumin, slat, pepper and lime zest and juice.
Bring the mixture to a simmer, stirring occasionally. Let it cook until the peanut butter is melted and the sauce is smooth. Once your sauce is ready, add three tablespoos of it to your beef mixture and continue to stir.
Lay out your tortillas and use three fourths of the Colby Jack cheese to make a link down the center of each. Then evenly distribute the meat down the center to each tortilla, over the cheese.
Fold the side of the tortilla that is parallel to the meat and cheese over the mixture. Repeat the process with the other side, rolling your tortilla into a tube.
Place the stuffed tortillas into a greased 9 x 13 baking dish, seam side down. Once all of your tortillas are in your baking dish, pour the remaining sauce over the top of them and down the middle, spreading it with a spoon to cover the tortillas.
Sprinkle the remaining Colby Jack over the sauce and bake your Enchilidas at 350 degrees until the cheese is melted inside and out (about 15 minutes).
Once they are done, remove your Enchilidas from the oven and top them with Queso Fresco and Cilantro and serve them hot for a meal the entire family is sure to love!
