Weekdays are crazy busy in my home. Between trying to get the hubs out the door for work and the kids in the car for school, we don’t generally have time to sit down together for breakfast. So on the weekends I try to make it a priority to fix a really fabulous morning meal that we can all enjoy together. Recently I was standing in front of my freezer looking for new ideas when I had the thought that everybody loves bite sized treats. And since I had some bite sized pastry shells in my freezer that I had no idea what to do with, I decided to mix up our morning routine and create a sausage and egg breakfast bite recipe that I was sure all of my boys would love!
What You Will Need:
1 Box of Puff Pastry Cups
1/4 Pound of Sausage
Shredded Cheese to Sprinkle over the Top
How to Make Them:
Start by preparing your pasty cups according to the directions on the box.
Be sure to keep an eye on them as you don’t want to get the base to your entire idea too crispy! Once your pastry bites are cooked, set them aside.
In two separate pans, scramble your eggs and cook your sausage, crumbling it into small pieces are you cook it. Once both the eggs and the sausage are cooked, drain the grease from your sausage and mix it in with the scrambled eggs.
Spoon your sausage and egg mixture into your pastry cups, filling each on to the brim.
Then top your sausage and egg with a sprinkling of cheese, allowing the heat from the filling to melt it slightly.
And that’s it! A quick and easy weekend breakfast that is amazing delicious and a favorite for all ages!
