Saying that my four year old is a picky eater would be a pretty big understatement. While he was willing to try new things when he was little, once he hit about two and a half years old, he suddenly stopped. Armed with the idea of making my smoothie mix into a meal and knowing how much my little loves to cook, I decided we’d make some easy Strawberry and Banana Smoothie Pancakes that would not only taste great but would help him get a serving of fruits and veggies first thing in the morning!
To start my mixture, I separated two eggs and added the egg whites from them to a mixing bowl. Then I allowed my son to pour in two scoops of PediaSure Sidekicks Fruit and Veggie Smoothie Mix.
We mixed the ingredients together well until we had formed a thick batter that was perfect for pancakes.
Then I simply added the batter to a heated griddle and cooked each pancake for about three minutes on each side! I have to say that my little guy was mesmerized by the process and was so excited about his strawberry and banana pancakes! And I was super excited that he was going to have a balanced way to start his day!
Once our pancakes were ready, I added a squirt of sugar free whipped cream to the top and sprinkled some diced strawberries on and we instantly had a breakfast that he and I both felt great about!
