With summer in full swing, I’ve been looking for simple dishes that are best enjoyed outdoors in the beautiful weather. And while we do grill out a lot, sometime I just want pasta on my back porch to satisfy my craving for carbs. So, in order to give some of my heavier pasta dishes a light summer makeover, I switched things up a bit. And the end result? Well, get ready to drool because this Tomato and Basil Pasta with Grilled Veggies is simply delicious!
What You Will Need:
1 Bag of Tomato Basil Pasta
1 Jar of Alfredo Sauce
1 Cup of Pork (chopped)
2 Cups of Spinach (chopped)
6-8 Pearl Onions
1-2 Sprigs of Parsley
2-3 Cloves of Garlic (minced)
12 Grape Tomatoes
2 Tablespoons of Olive Oil
1/2 Cup of Black Olive Fontinella Cheese (grated)
Salt and Pepper (to taste)
How to Make It:
Start by cooking your pasta according to the directions on the package. Once your pasta is completely cooked, drain it and set it aside. Next, heat one tablespoon of olive oil over medium heat in a non-stick pan. Once the oil begins to smoke add your pearl onions and saute them until char marks begin to appear. Remove your pearl onions from your pan and repeat the process with you grape tomatoes.
Once your onions and tomatoes are ready, wipe your pan out and then add one teaspoon of oil. Saute your spinach until the color brightens and then set it aside as well.
Next, prepare your pork (or any meat substitute you would like) by cutting it up and cooking it completely in your saute pan. Once all of your ingredients are prepared, you’re ready to assemble your dish!
Arrange your pasta on your plate and add your meat to the top of it.
Next spoon on your warmed Alfredo sauce and minced garlic. Finally, layer on your pearl onions, tomatoes and spinach and top your dish with shredded cheese and parsley for a finished meal everyone in the family is sure to love!
