In my home, summer evenings are a magical time. The craziness of the school year has faded from our memories and my family is able to enjoy warm evenings where fireflies light the skies, the sound of laughter rings out and the smell of a special weeknight dessert fills the air. There is just something about those few months where the days are longer and the worries and less that makes life seem sweeter.
Part of what makes our summer time special is the ability to be outside as much as possible. Literally from the moment my boys wake up in the morning, they are racing down the streets, running through sprinklers and playing with friends while their skin turns a beautiful brown and their faces light up with joy. Since I know how special outdoor time is not only to them but to our whole family during the summer months, I’ve been looking for ways to make it even more magical. And what started as simply pulling our grill out in the front yard so that we could make meal time a part of our summer memories has turned into a way of life where we end the day with a sweet treat as the sun slips behind the mountains once again.
So why did I decided to create something unique and turn these few precious months into a S’Mores summer? Well, it actually started with a trip to Walmart. As we were walking down the aisles and my teen was telling me all about his plans to camp out, we saw a display with everything we needed on it to make one of our favorite weeknight desserts….S’mores.
My usually too-cool-to-get-excited-about-anything son immediately started hopping around on one foot and begging which caused me to stop and take a second look at the display and I have to admit, my inner child started cheering. All of a sudden memories of campfires, firepits and warm summer evenings from my own teen years flooded back over me and I knew in that instant that I had a chance to really create a memorable moment with my son. With a few tears in my eyes and visions of a much younger me sitting by the campfire dancing in my head, I added Hershey’s Milk Chocolate bars, Honey Maid Graham Cracker Squares and Kraft’s Jet Puffed Marshmallows to my cart and headed for the checkout.
When we arrived home, I started my normal prep work for dinner while my son helped put up the groceries. And as he got to the S’mores items in the bottom of the bag, he set them on the counter and looked at my expectantly. At first I thought we’d have to wait till we had access to a campfire. But as I pulled out the grill brush to prepare for dinner, a fun idea hit me and I knew instantly that our S’mores were about to get a weeknight makeover that I was sure we would love.
While I was most familiar with cooking S’mores over a campfire, I knew that our grill would make the perfect heat source to create my S’mores quickly but at first I was perplexed as to what to grill them in. I thought about aluminum foil. I even looked at a few ideas online. But as I glanced over and saw my trusted cast iron pan, a truly delicious idea hit me. I quickly grabbed it, pulled together my ingredients and got ready to assemble a Grilled S’mores Dip that would only take minutes to make! After all, I knew from experience that S’mores come in all different forms and can be cooked in a variety of ways and I was ready to mix things up a little bit!
I started by crushing up half of my graham crackers and pouring them into the bottom of my cast iron pan.
Next, I layered on my Hershey’s Milk Chocolate Bars. I found that breaking them up into pieces allowed them to fit the best and cover the majority of my pan.
Finally I covered my Hershey’s bars with a layer of Marshmallows.
The whole process of preparing my Cast Iron S’mores Dip took about three minutes from start to finish and after I was done, I couldn’t help but be excited by the beautiful ready to grill dessert I had sitting in front of me.
And since we already had the grill hot from dinner, all I had to do was head outside, place my cast iron pan onto the grill and close the lid!
Within five minutes my chocolate was melted to perfection, my marshmallows were a beautiful golden brown and my entire pan looking pretty much like heaven!
All that was left to do was pull out my graham cracker squares and get to dipping!
With each and every dip perfection was achieved with gooey chocolate, melty marshmallows and crunchy graham crackers!
I watched my husband and son’s faces light up as they dipped their graham crackers into the S’more Dip and took their first bite and I knew that I had created more than a simple weeknight dessert.
I had created an experience. A taste. A memory. And I knew it was one that would last be treasured for many years go come.
Now, on warm summer nights, when the sun is setting and the happiness is so thick in the air that is just surrounds you, I’ll grab my cast iron pan, warm up the grill and in less than ten minutes create a S’mores dip dessert that tastes just as magical as our summer months feel.
Going forward I know that when we think back to this perfect summer and it’s long fun-filled days, the smell of S’mores and the taste of perfection will come to mind.
