I think it goes without saying that mornings are hectic for moms. No matter how early I get up I always find myself running behind, trying to feed the kids and get them out the door. But one of my goals in the new school year has been making time for breakfast for ME! In order to do that I’ve been playing around with easy breakfast ideas that I actually want to eat. And just this past weekend I discovered that I can make blueberry muffins (pretty much my all time favorite breakfast) in a mug in less than five minutes! Wanna know how? Sure you do!
What You Will Need:
1/4 Cup of Flour
1 Tablespoon of Brown Sugar
1/4 Teaspoon of Salt
1/8 Teaspoon of Cinnamon
1/8 Teaspoon of Nutmeg
2/3 Tablespoon of Unsalted Butter
2 and 1/2 Tablespoons of Milk
1/4 Cup of Fresh Blueberries
Powdered Sugar for Topping
How to Make Them:
I started my easy blueberry mug muffin by adding my flour, brown sugar, salt, cinnamon and nutmeg to a microwave safe mug.
After stirring all these ingredients together well, I softened my butter in the microwave and using a large spoon blended it with my dry ingredients.
Next, I mixed in my milk and stirred my batter well. At this point it was very thick and looked like a muffin batter. With my batter prepared, it was time to add my blueberries. Now, you can totally use frozen blueberries here but I had fresh on hand and well, I always like fresh better! So I washed my fresh blueberries and then gently folded them into the batter using my hands so that the blueberries would not burst.
With my mug muffin assembled, I headed to the microwave and popped my mug inside for 90 seconds.
In just a minute and a half, my Blueberry Mug Muffin was cooked. For a sweet finishing touch I sprinkled powdered sugar over the top and it was ready to eat.
I have to say, this easy breakfast was simply amazing! In less than five minutes I had a mouth watering breakfast that smelled fabulous and tasted even better!
