In my quest to make more dinners at home, I’ve been experimenting. Trying to find quick and easy ways to put a delicious meal on the table. And recently I stumbled across a family favorite that I’m sure will be making repeat appearances at our home. You see, my family loves quesadillas. But in my goal to mix things up and add fresh flavors, I decided to put a twist on a classic quesadilla and give it a whole new taste.
What You Will Need (Makes 4):
1 and 1/2 Pounds of Chicken (sliced and seasoned)
1 Package of Bacon
4 Soft Tortilla Shells
1 Cup of Shredded Mexican Cheese
1/2 Cup of Ranch Dressing
1/2 Tablespoon of Butter
How to Make It:
I prefer to use a griddle to make my quesadillas but you can use a regular pan if one is not available. I started by heading my griddle to 350 degrees. While the griddle was warming up, I cooked my bacon and crumbled it into pieces. They I sauteed my chicken in a pan until it was completely done.
After coating my soft tortilla shell with a thin layer of butter I place it on the griddle and added my cooked chicken and crumbled bacon.
Next I sprinkled Ranch dressing over the chicken and bacon and then added 1/2 of a cup of shredded cheese. I folded the top of my tortilla over my ingredients and the closed the griddle top so that both sides would cook at the same time. (If you’re using a pan, simply cook each side for two to three minutes or until it’s golden brown).
Once my quesadillas were golden brown and slightly crunch on the outside, I removed them from the heat, sliced them into pieces and then sprinkled the remainder of the ranch and bacon pieces over the top.
After pairing this delicious meal with a fresh salad, I was ready to serve it to my family for a dinner they beg for quite often now!
