You guys, it’s officially Fall! The weather is cooling down. The leaves are falling. And in my home it’s time to wrap ourselves in warmth with delicious comfort food. While I have my go-to favorites, this year is busier than ever so I’ve been working to reinvent foods that are perfect for cooler weather and turn then into easy family favorites. So when Progresso asked me to partner with them for a sponsored post sharing how I’m capturing my festive fall mood in warm and delicious foods, I couldn’t wait to share a recipe with you that has skyrocketed to the top of our family favorites list.
I’m going to admit, when the weather starts cooling down outside, it makes me happy. Fall is my favorite time of the year because it’s not yet crazy cold but it’s cool enough to pull out jeans, boots and jackets. And it’s cool enough to warm up my kitchen with amazing smells and tasty pairings that just scream Fall. In fact, just last week as I stood in front of my window and watched the leaves turn to red and yellow and fall slowly from their branches, I found myself suddenly longing for a warm and delicious meal that I could make in minutes but that captured the warmth that Fall brings to the inside of my home.
After cranking up the heat, I made a quick trip to Walmart to see if I could mix up my meals and come up with comfort foods that were easy enough to fit in with my crazy schedule and good enough to bring my entire family running to the kitchen, drawn by smells and tastes that scream Fall. As I walked down aisle after aisle, I kept finding myself back in the soup aisle. After all, what says Fall more than a steaming bowl of soup. However, I was in the mood for something hearty. Something flavorful. And as soon as my eyes landed on the amazing selection of Progresso Traditional soups, I knew that I had found the only place to start.
I’ll admit, the selection seemed endless. And while each and every option made with fresh ingredients had me drooling, as soon as my eyes landed on the Progresso Traditional Creamy Tomato with Penne soup, I began to have an idea. Knowing that this soup was the base for an unforgettable Fall meal that would fill us all with warmth, I added it to my cart, picked up my additional ingredients and headed home to start creating.
Now, I know you’re wondering why I didn’t just pull back that lid, heat up my soup and add it to a bread bowl. And while I’ll admit that’s my lunch several times a week during the Fall and Winter months, I wanted something different for dinner. Something unexpected. But yet I wanted the fresh Progresso flavors throughout my dish. Inspired by the Penne pasta in the Progresso soup, I added some water to the stove and cooked an additional box of Penne Pasta.
At the same time I pulled some frozen pre-cooked chicken out and quickly warmed it up.
Once my chicken and pasta were ready (which took all of about ten minutes) I added them to a large bowl and poured in two cans of Progresso Traditional Creamy Tomato with Penne Soup.
After stirring all my ingredients gently together, I poured them into a casserole dish. I have to say by this point I could smell the spices in the soup and knew my meal was going to be amazing! And instead of having to take hours preparing it, I had been able to assemble my casserole in minutes thanks to the fresh ingredients that were waiting inside my Progresso soup can!
While my dish looked amazing as is, cheese seemed to be the perfect finishing touch so I sprinkled some over the top.
After adding a slight sprinkling of bread crumbs for crunch, my Creamy Chicken, Tomato and Penne Bake was ready for the oven.
Since most of the ingredients were already cooked, I didn’t need tons of time for baking my flavorful dish. I simply popped it into an oven preheated to 350 degrees and let it cook for fifteen minutes, just long enough for the soup to bubble and the cheese to melt.
Once my timer went off, alerting me that my fabulous Fall dish was cooked to perfection, I pulled it out of the oven, allowed it to cool slightly and prepared to serve a dish that I just knew would warm our bellies and our souls.
As I called my family to dinner, I knew I had created a dish that they would love. After all, it was full of Fall flavors like comforting tomato soup yet it had a twist that made it a beloved and unique dish.
As I dipped up all of our plates, something about the warm pasta and the scent of tomato soup wrapped itself around me and instantly I knew that all the things I feel about Fall – the excitement, the warmth, the love – were wrapped up into this easy to make meal.
And the minute my guys took their first bite, the couldn’t help but agree.
Because by starting with the the fresh ingredients of Progresso Soup, I had given our meal the foundation it needed to truly elevate the taste and match our Fall mood.
