With the weather cooling down and Fall moving in, I’m pulling out some of my tried and true recipes to warm things up. So when Bertolli® asked me to partner with them for a sponsored post sharing how I’m using their Tuscan inspired sauces to spice up my favorite family recipes, I knew just what to do!
I never thought I’d say this but cooking has become one of my passions in life. There are few things that I love more than taking a family recipe, adding my own flare and breathing new life into it for my always hungry guys. In fact, it’s become my mission to spice up the recipes my mama used to make and turn them into favorites for a whole new generation.
So when I started going through my favorite Fall recipes and found one of my favorite childhood meals, I quickly decided it was time to breath some new life into it. You see, I loved stuffed shells when I was growing up. It was just one of those foods that I couldn’t get enough of and that always made it smell and taste like home. Knowing that I wanted to give my own guys the same experience, I dusted off my mom’s old recipe, decided to update it with bolder flavors and set to work creating Spinach and Ricotta Stuffed Shells!
As I headed to the grocery store to get my key ingredients, variations of how to make this meal extra special were running through my mind. I knew that by adding the spinach I would achieve a different texture in the shells. But in addition to that I wanted to punch up the flavor just a little bit! And as soon as I spotted the Bertolli® Taste of Italy® Tuscan Inspired Sauces at Harris Teeter, I knew I had found an amazing way to take a dish I had loved for years and make it even better!
The flavor combinations in the Bertolli® Taste of Italy® Tuscan Inspired sauces immediately caught my attention and convinced me that I could take this dish to new levels with just a little help! Armed with the Tomato and Basil variety, I headed home to turn and old favorite into a delicious modern meal!
What You Will Need:
1 Jar of Bertolli® Taste of Italy® Tomato and Basil Tuscan-Inspired Sauce
1 Package of Jumbo Pasta Shells
2 Cups of Ricotta Cheese
2 Cups of Shredded Mozzarella Cheese
1/2 Cup of Parmesan Cheese
1 Cup of Cooked Spinach
1 Tablespoon of Minced Garlic
1 Teaspoon of Basil
1 Teaspoon of Oregano
How to Make It:
I started by preheating my over to 350 degrees. While it was warming up, I cooked my shells according to the directions on the box and immediately placed them in an ice bath.
While my shells were cooling, I started to work on my filling. This was as simple as adding my Ricotta Cheese, 1 and 1/2 cups of mozzarella cheese and my Parmesan Cheese to a mixing bowl. I then added in my eggs, basil and oregano and mixed all the ingredients together well until they formed a thick filling.
After folding in my drained spinach, my filling for my stuffed shells was ready.
Next, I poured half of my container of Bertolli® Taste of Italy® Tomato and Basil Tuscan inspired sauce into a glass baking dish.
Then I gently removed my shells from the water one at a time and filled them with my cheese and spinach filling.
Once my shells were filled, I lined them up side by side in my pan.
The final step was pouring the remainder of my Bertolli® sauce over the top and my stuffed shells were ready to go into the oven.
My stuffed shells baked for 25 minutes and came out piping hot and smelling wonderful! As soon as I removed them from the oven, I sprinkled the remainder of my mozzarella cheese on top and allowed it to melt.
Once the cheese was melted, it was time to serve my new take on a family favorite to my waiting guys!
As they took their first bite, I knew that I had found a way to take a dish I thought was perfect and make it even better! By spicing it up with the Bertolli® Tuscan inspired sauce, each and every bite delivered flavor that made this dish better than ever before.
After discovering how easy it was to breath new life into my childhood favorite, I’ve decided that it’s time to reinvent many of my favorite dishes! From spaghetti and meatballs to lasagna, I’ll be adding something new to my classic meals with the help of Bertolli®! And who knows?
