Living a healthy lifestyle has always been important to me. However, being in my mid-30’s now, I’ve really been taking a closer look at what I eat and how I eat it…not just for myself but for my whole family. So when I was challenged to look at my eating and create a recipe that my family loves and I feel great about serving, I had to really rethink my food choices. Growing up, I thought my family ate healthy meals. My mom always made sure our plates were well balanced and she took great time and effort to ensure that our diets were healthy. Thankfully this gave me a great foundation when it comes to healthy eating. But as we all know, times are changing and we’ve become more aware than ever of what’s in our food. We’ve gotten smarter about the foods we choose and we’ve learned that not all food is truly created equal. In fact, as part of my healthy diet, I’ve been paying extra special attention to meats that are raised without antibiotics and added hormones or steroids. It has become important to me to bring foods into my home that are as natural as possible and raised in a way that doesn’t make me wonder what I’m really putting in my family’s bodies. And when I can then take those meats and turn them into a meal that looks amazing, tastes amazing and fits in with my entire family’s healthy lifestyle, that’s a true win in my book.
So how am I creating meals like this? Meals that are truly mouthwatering but are completely free of the hormones and steroids that I so don’t want to bring into my home? Well, it’s easier thank you might think. After discovering that there was a whole new way to put healthy yet easy-to-make chicken dishes on my table, I couldn’t help but stock up. After all, with varieties that are gluten free, grilled and even breaded, it’s the perfect way to ensure I feel great about what my entire family is eating.
After picking up my new favorite chicken in the frozen foods aisle of Target, I headed home to decide what to make first. There were so many recipes running though my head but I decided to step outside my box so to speak and see what I could create. To start with, I headed over to the NatureRaised Farms® Chicken Pinterest Page for a little inspiration. With simple dishes, kabobs, pastas and more it was the perfect starting point to putting a healthy creation on my family table. But I have to admit, my eyes kept getting drawn back to the amazing salads featuring NatureRaised Farms® Chicken.
With creations like Italian Bruschetta Grilled Chicken Salad and Marinated Mediterranean Grilled Chicken Salad it was the inspiration I needed to really make dinner a healthy treat. You see, you might call me the queen of salads because it’s one of my favorite things to make (and eat). So when I saw how delicious the salads made with NatureRaised Farms® Chicken looked on their Pinterest page, I decided the only thing to do was make a salad of my own.
Inspired by seasonal flavors, I pulled out some basic ingredients like kale, pomegranate, walnuts and feta cheese. Then I cooked my delicious NatureRaised Farms® Chicken in a skillet to ensure that each bite was delicious.
My goal of the meal was to keep things simple and enhance the 100% natural flavors of my delicious ingredients. So as soon as my chicken was done cooking, I removed it from the stove and prepared my simple salad. It was as easy as adding freshly chopped kale the the bottom of my bowl. I then added my delicious, nutritious and easy to make NatureRaised Farms® Chicken to my bowl. Next my pomegranate went in followed by walnuts and a little bit of crumbled feta cheese.
All that was missing was a fresh dressing. Since I wanted to stick with the natural theme, I decided to whip up a quick and easy lemon, olive oil and garlic mixture to lightly drizzle over the top. My goal in this was to simply make the natural flavors I already had stand out even more instead of masking them with heavy dressing.
After adding my fresh dressing, I gently tossed all of my ingredients together and my amazingly fresh salad was ready to serve.
