I am seriously in shock that November is already almost half way over. With the weather cooling down and the trees becoming bare, I have to say that things are heating up in my kitchen. You see, the entire month of November, my house is bursting with activity. From neighbors to family to friends there is always a large group around and that means that I’m constantly working on perfecting simple recipes to serve all the hungry mouths that gather around my table.
Of course with it being a thankful time of year, turkey is a main ingredient in my kitchen. In fact, we don’t just save the big bird for one special day. Instead we mix it up all month by giving our turkey a twist and turning it into amazing dinners that are perfect for our family and even better for sharing! And just this week I decided to grab a bird (or a turkey breast to be precise), mix things up a bit and create a Turkey Tetrazzini recipe that I have to say is just the most delicious thing ever, not to mention a perfect new way to serve that Thanksgiving turkey!
The idea for this dish started when I was perusing the aisles during my weekly trip to Walmart. I’ve been stocking up on essentials though out the month, so I wasn’t surprised to find myself adding several boxes of Swanson 100% Natural Chicken Broth to my cart. Since I’ve been using it to enhance the flavors of my food for so many years, I knew it was a must have item.
But as I thought hard about what delicious dish I should put on the table this holiday season, I decided it was time to think outside of the Swanson box (so to speak) and use this chicken broth to make some truly amazing holiday fare that was just a little bit different!
What You Will Need:
2 Pound+ of Turkey Breast
1 Large Sweet Onion
2 Cups of Mushrooms
3/4 of a Stick of Butter
1/4 Cup of Flour
1 and 1/2 Cups of Whole Milk
2 and 1/2 Cups of Swanson 100% Natural Chicken Broth
1/4 Cup of Swanson Chicken Stock
2 Cups of Frozen Peas
1 and 1/2 Cups of Parmesan Cheese
1/2 Cup of Bread Crumbs
1 Box of Thin Spaghetti Noodles
How to Make It:
While most people think of a golden turkey breast sitting on the Thanksgiving table, in my family we like to have options. Now that doesn’t mean we don’t have our roasted turkey but it does mean that I like to serve it up a variety of ways. And while a whole turkey is a tradition in our home, sometimes we like to mix things up a little bit by using specific parts of our turkey to create simply amazing holiday fare!
To make the perfect Turkey breast, I simply placed my two pound breast in a shallow baking dish and poured a half a cup of Swanson 100% Natural Chicken Broth over the top.
Then I sprinkled Italian herbs over the top of the broth and popped my turkey in the oven on 375 degrees for one hour. Now I have to say what I love about the addition of Swanson 100% Natural Chicken Broth in my cooking process is that it keeps my meat flavorful and juicy which is essential to making amazing Tetrazzini!
After straightening up the house, my turkey was cooked to beautiful perfection and I was ready to turn it into a delicious dish that while centered around turkey was a whole new twist on this holiday meat.
I quickly chopped up my onion and mushrooms and prepared them to cook.
Once they were ready, I added a half of a stick of butter to my saute pan and added in my vegetable mixture. I cooked the onions and mushrooms in the butter just long enough for the butter to soak into the veggies.
With my mushrooms and onions fork tender, I poured in my flour and gently mixed all the ingredients so that my flour covered everything evenly. Next I poured in my milk.
After mixing my milk into the prepared mushrooms and onions, it was time for the most important item, Swanson 100% Natural Chicken Broth. I knew this was the perfect way to really up the flavor of this dish and turn it into an instant family favorite.
With my Swanson Chicken Broth mixed in, I added a fourth of a cup of Swanson Chicken Stock and brought my entire mixture to a boil.
I then reduced the heat to low and let my mixture simmer while I boiled a box of thin spaghetti noodles. By the time my noodles were cooked, my sauce had thickened to perfection and I was ready to assemble my dish.
To do this I poured my noodles into a large bowl.
Next, I cubed my perfectly cooked turkey and added it to the top of my noodles.
In went my frozen peas and a cup of Parmesan Cheese for texture and color.
Finally I poured my thickened mushroom and onion mixture over the top.
After gently stirring all of my ingredients together, I was ready to transfer them to my baking dish.
I prepared my dish by spraying it with cooking spray and then using a pair of tongs, I gently transferred my mixture into the dish, ensuring that everything was evenly mixed for a delicious combination of pasta, turkey and veggies in every bite.
With my baking dish full of delicious Turkey Tetrazzini, I mixed together the remainder of my Parmesan cheese and my bread crumbs and sprinkled them over the top.
Then I cut up the last teaspoon of my butter and sprinkled it over the top as well.
Into the oven my Turkey Tetrazzini went. I baked it at 375 degrees for twenty-five minutes until the top was bubbly and browned to perfection. Then I removed it from the oven and allowed it to cool slightly before serving.
As soon as it had cooled enough to eat, I was ready to dip up my flavorful dish.
I adored that each and every bite was bursting with flavor and my entire family loved the combination of seasonal items like turkey, mushrooms and onions. They instantly declared that it was a perfect way to have our turkey and eat it too!
Once they were done eating, they asked when we could have this amazing dish again and I just smiled because I knew that this simple Turkey Tetrazzini is not only easy to make but also freezes like a boss, ensuring that I can serve up our twist of turkey anytime I want.
