This last year of my life has been completely crazy. Between moving, my youngest starting school, my oldest becoming a teen and life in general picking up steam I’ve found that time is not my friend. Now I’ve tried to find creative ways to manage my time. I’ve made rules about my “office hours” only being when the kids are at school. But I have to admit that I’ve failed horribly. And when I sat down to determine where all my time was going, it quickly became apparent that my overly full email inbox was the problem.
You see, every time I look at my email, I’m horrified. Over 9000 unread emails can do that to a girl. And they just keep growing. After subscribing for this and signing up for that, it’s gotten to the point where simply managing my email can feel like a full time job. I’ve started missing notifications from the kids’ school. I’ve found quite a few work related emails after the deadlines have passed. And more importantly, I’ve missed fun moments with my kiddos because of desperately trying to work my way through all these emails.
So, I posed a question to my way-too-busy self. If I had more time to simply do the things I wanted to each day, how would I spend it? And my littlest (bless his little heart) said “We’d bake amazing recipes mommy because that’s my favorite thing to do with you and you never have enough time!” After (obviously) wiping the tears from my eyes and pushing down some major mommy guilt, I grabbed his little hand, put my email to the back of my mind and decided not only were we going to bake something but we were going to bake something memorable!
Now, I know I could have gone to the store to pick up the ingredients. But I live in the mountains of North Carolina and I really wanted to do more with the time spent with my son. So we packed up the car, headed to the apple orchard and hand picked the most important ingredient in our special recipe.
Once we got home (and cleaned ourselves up) he looked at me expectantly while holding one of his perfect apples and wondering if his email-free mommy time was done but it so wasn’t.
Because while I wasn’t worrying about my inbox, I had plenty of time to whip up some fun and delicious Apple Pie Monkey Bread with him. We started off by washing our apples and chopping them up.
Then we added a fourth of a cup of sugar and a fourth of cup of brown sugar to our freshly picked and chopped apples.
After stirring our ingredients together well, it was time to turn them into something truly amazing! So we pulled out two cans of refrigerated biscuits, cut them into fourths and flattened each forth out. Then we added a fourth of a teaspoon of our apple mixture to the center of each biscuit piece, rolled it up into a ball around the apple mixture and dipped it into a mixture of sugar and brown sugar.
With each apple biscuit ball, we took our Monkey Bread to a fun new level and my little guy loved adding them to our greased bundt pan in perfect order.
After covering the bottom of the pan with our dough and apple creation, we took more of our apple mixture and sprinkled it over the top, continuing the layering of monkey bread and fresh apples until we had used both cans of biscuits.
Once our dough and apples were ready, we melted a half a cup of butter, mixed in a fourth a cup of brown sugar and poured it over the top. After tapping our pan gently to help it settle, all that was left to do was bake our delicious treat at 350 degrees for forty minutes.
While our Apple Pie Monkey Bread baked, we read books, went for a walk around the neighborhood and spent time together. And once the timer went off and our amazing treat was done?
Well, we took the time to enjoy that too!

But now that I’ve learned my lesson and have discovered all the amazing memories I could be making with my extra time, I’m never going back!
