During the holiday season, it seems like there’s a constant rush of entertaining. Whether we’re hosting or attending, I’m always looking for delicious recipes that are simple enough to make quickly but deliver a really impressive blend of tastes that capture the spirit of the holiday season. This year, I’ve been all about holiday salads. Whether I use them as the appetizer, the meal or simply as a platter to take with me when attending festivities, a holiday salad is a perfect way to impress guests quickly.
Over the last few weeks, I’ve been experimenting with tastes, flavors and combinations. And recently I discovered what is sure to be my signature holiday salad this year. With the perfect blend of sweet, crunchy and tangy, it’s a celebration in your mouth that will have you feeling super festive!
This delicious creation came to be with a little flavor inspiration from Litehouse foods. After discovering that their Pear Gorgonzola Salad Dressing makes me drool, I used it as the inspiration for an entire dish that perfectly embodies the holiday spirit and makes a gorgeous dish for any type of celebration.
What You Will Need:
Litehouse Foods Pear Gorgonzola Dressing
Litehouse Foods Cilantro
Simply Artisan Reserve Gorgonzola Cheese
1 Chicken Breast (Sliced)
1 Teaspoon of Olive Oil
1 Cup of Fresh Spring Mix Salad
1/2 Pear (Cubed)
1/4 Cup of Fresh Dried Cranberries
1/4 Cup of Walnuts
How to Make It:
Honestly, this is such a simple salad to make yet it delivers such an amazing combination of flavors! To start, I added my sliced chicken to a skillet with my olive oil. Then I mixed in a tablespoon of my Litehouse Cilantro and cooked my chicken until it was completely done.
With my chicken ready and boasting an amazing flavor thanks to the addition of cilantro, I added my spring mix, cubed pear, fresh dried cranberries and walnuts to my bowl.
Next, I placed my pieces of perfectly cooked chicken over the top. Once my chicken was in place, I added a generous amount of the gorgonzola cheese.
Now I have to say this is one of my favorite cheeses EVER so I went a little heavy with it and I highly recommend that you do the same because let’s just say it, it’s divine!
With all the ingredients of my salad added to my bowl, I poured my Litehouse Pear and Gorgonzola Salad Dressing over the top.
And just like that I had an amazing holiday recipe that is perfect for lunch or dinner entertaining! With the awesome combination of beautiful colors from the cranberries, pears and cheese paired with the seasonal tastes, it is the perfect holiday dish for my family!

no lie, I have pretty much every single bottle of the Litehouse herbs in my fridge! They are seriously the best ever and I am constantly using them. There’s always a time for actual FRESH herbs, of course, but being able to have the quick real herbs from Litehouse totally makes my life easier.
