When a new year starts, I always try to clean up my family’s eating. As many people do, I resolve to create healthier meals, put more emphasis on adding grains to our diet and find ways to make meals that are both tasty and natural. In the past, I’ve struggled with staying on track with this resolution because I’ve made eating healthy too complicated. I’ve tried adding in too many things at once and ended up with a big old mess. So this year, I made it my goal to do things differently; to simplify healthy eating with meals that are quick, easy and above all delicious!
When I started switching things up in the kitchen, I immediately found that I was reaching for quinoa pretty much daily. With it’s amazing texture and satisfying taste, it was the perfect addition to many healthy meals. And while my whole family was already in love with it as an meal time addition, it wasn’t until I created a Quinoa, Chicken and Broccolini Teriyaki Bowl that we truly discovered the easiest and best healthy dish ever!
Now, I should start by saying that I’ve been in love with quinoa for years. Ever since discovering it when the hubby and I were dining out on a date about three years ago, it’s been a staple in my home. So it stands to reason that I’m always looking for the best quinoa to add to meals and recipes. So armed with my newly discovered pantry staple, I set out to really make healthy eating simple yet delicious. For me, this meant not going crazy with all types of ingredients. It meant getting back to the basics with grains, veggies and proteins that I’ve used for years. It meant finding simple ways to make dinner amazing. And if it all just happened to come together in a bowl of food that’s so good and so comforting that you’ll forget you’re even eating healthy? Well, that was just an added bonus!
What You Will Need:
1 Cup of Village Harvest Red Quinoa
2 Cups of Water
2 Tablespoons of Olive Oil
1 Head of Broccolini
2 Tablespoons of Minced Garlic
Sliced Chicken Breasts
1/4 Cup of Low Sodium Soy Sauce
1 and 1/4 Cups of Water
1/2 Teaspoon of Ground Ginger
1/2 Teaspoon of Minced Garlic
5 Tablespoons of Brown Sugar
1 Tablespoon of Honey
2 Tablespoons of Corn Starch
1/2 Teaspoon of Sesame Seeds
Diced Green Onion (to taste)
How to Make It:
To create my simple yet healthy dinner I started with Village Harvest Red Quinoa. With the same health benefits as Golden Quinoa but a gorgeous color and a slightly chewier and nuttier flavor, it is the perfect base for unforgettable healthy meals. And by the way, cooking quinoa is SO easy! I simply measured out one cup in my measuring cup.
After rinsing it in cold water, I added my quinoa and two cups of water to a pan and brought them to a boil. Then I reduced the heat to low and let all the water cook out of my quinoa while I prepared the remainder of my ingredients.
While my quinoa was simmering, I washed my broccolini, cut it down into individual stalk and added it to a saute pan with one tablespoon of olive oil and two tablespoons of minced garlic.
I then sauted it over medium heat until my broccolini stalks were slightly soft but had not lost their vibrant color (about five to seven minutes). Once my broccolini was ready, I moved it to a bowl, added my second tablespoon of olive oil to my pan and cooked my chicken until it was completely done (yes, that’s right – only two pans needed for this dish!).
With my quinoa almost ready and my broccolini and chicken cooked, all that was left to do was create my sauce. To do this I removed my chicken from my pan and poured in my soy sauce, one cup of water, ginger, garlic, brown sugar and honey and heated it up while mixing the ingredients well. Then When my mixture was warm, I mixed together my corn starch and my remaining fourth of a cup of water and poured them into the mixture.
After allowing my teriyaki sauce to thicken for about three minutes, I was ready to assemble my Quinoa, Chicken and Broccolini Teriyaki Bowl! I started by adding a generous portion of beautiful Village Harvest Red Quinoa to my bowl.
Next, I placed my cooked broccolini in.
Then I added my cooked chicken to the remainder of my bowl.
Now, I know I could have mixed all these ingredients together but I really love the simplicity of keeping the flavors separate and adding them together as I eat. With all three items added to my bowl, I spooned two tablespoons of my teriyaki mixture over the top.
Then I added a few sesame seeds and some green onions (optional) to really take the flavor profile to new levels. And just like that, I had a simply delicious and awesomely healthy meal that my whole family loves.
With grains, vegetables and protein, it’s a well rounded meal that’s easy to make.
And the best part is, I can cook all my individual ingredients ahead of time (or even make extras) and assemble this healthy family favorite any time we want it.
