One of my resolutions for the new year is to find ways to add more veggies to my family’s diet. It’s not like I haven’t tried in the past but I’ve discovered that for my guys to make their veggies disappear, they must be deliciously tasty. And for me to present them with veggies each and every day, they must be simple and quick. Knowing these two things, I’ve been looking for a way to find that sweet spot where flavor and easy preparation meet. And recently, I’ve discovered a way to make everyone in our family happy when it comes to finding the perfect side with a little help from Birds Eye® Protein Blends.
When I first discovered these tasty sides, I knew I had stumbled onto something amazing. And after trying out each of the four flavors (California Style, Italian Style, Asian Style and Southwest Style), I was pretty sure the way I looked at completing our meals had changed forever! In fact, I so fell in love with the ease and taste of Birds Eye® Protein Blends that I decided to incorporate them into a side dish that has become the most asked for recipe in our home; Southwest Zucchini Boats.
This fun combination of Birds Eye® Protein Blends and fresh zucchini is perfect for little (and big) hands and makes sides fun! And once I discovered how easy they are to make thanks to the quick preparation of Birds Eye® Protein Blends, I knew I had struck gold when it comes to presenting a side dish that my family adores.
What You Will Need:
1 Package of Birds Eye® Protein Blends Southwest Style
3 Medium Sized Zucchini
1 Teaspoon of Olive Oil
1/8 Cup of Shredded Mexican Cheese
3 Ounces of Plain Greek Yogurt
Taco Seasoning (to taste)
Sliced Green Onions (for Garnish)
How to Make It:
Let me start by saying that the Southwest Style of Birds Eye® Protein Blends is amazing alone! I’m a big fan of anything with a southwest flare so this is probably my favorite of the varieties. And since the bag comes ready with veggies, grains and sauces, it makes creating these Southwest Zucchini Boats a breeze!
To start my zucchini boats, I cut the ends off of my zucchini and split each one down the middle. Then using a spoon, I scooped out the soft insides of each zucchini half.
Next, I brushed my olive oil onto my hollowed out pieces of zucchini.
Into the oven they went on 350 degrees for twelve minutes. While my zucchini were cooking, I placed my bag of Southwest Style Birds Eye® Protein Blends into the microwave and cooked it according to the directions on the package. Once my protein blends were cooked, I removed them from the microwave, cut open the bag and placed them in a bowl.
Next, I removed my zucchini from the oven and carefully spooned my Southwest Style Birds Eye® Protein Blends into each piece of zucchini, filling it completely.
Since I wanted to make sure the flavors of the sauce that came in my Birds Eye® Protein Blends was the star, I sprinkled just a small amount of cheese over the top of my filling.
With my zucchini boats stuffed and smelling amazing, I placed them back into the oven for an addition twelve minutes on 350 degrees so that I could ensure that the zucchini itself was soft.
While my zucchini boats finished cooking, I prepared the meat for my meal and mixed together my Greek yogurt and a little bit of my taco seasoning. As soon as my Southwest Zucchini Boats came out of the oven, I squeezed a small amount of my yogurt and taco seasoning mixture over the top.
Then I finished my side dish by sprinkling a few green onions over my Southwest Zucchini Boats. I have to say they looked so pretty but I knew that they were going to taste even better!
The flavors from the Southwest Style Birds Eye® Protein Blends were just the perfect filling for this fun side that was sure to complete my meal in an unforgettable way!
Since we happened to be having grilled pork chops for dinner, I plated one pork chop with one of my Southwest Zucchini Boats. Then I added a little salsa to my pork chop to keep my flavor profile strong. And the end result was a meal that was kid-friendly and filled with protein and amazing flavors.
As I called my family to the dinner table, I’ll admit they were impressed with what I had presented. But more than that, they were thrilled with the flavors that the Birds Eye® Protein Blends had helped infuse into my creative side!
