Some of my best memories involve coming around the table with my family over delicious dishes plucked straight from the sea. You see, these little bites of heaven are the perfect addition to many dishes and I have to say that nothing thrills my family like my Simple Shrimp Scampi over Zoodles.
In fact, this amazing dish is a weekly ritual in my home. But it wasn’t always that way because somewhere over the years, I lost my way and stopped fixing seafood as often. But after discovering that the The U.S. Department of Agriculture (USDA) recommends that people eat at least two servings of seafood each week, I decided I had to up my game and find a way to make creating amazing seafood dishes simple and delicious. In fact, this Simple Shrimp Scampi over Zoodles is one of the easiest dishes I have ever make in my kitchen…..but it’s also one of the most flavorful.
What You Will Need:
2-3 Medium Sized Zucchini
1/2 Cup of Grape Tomatoes
1 Tablespoon of Olive Oil
Diced Green Onion
Parmesan Cheese for Garnish
How to Make It:
This family pleasing dish is so simple to make! Don’t let the fact that it looks difficult deceive you because I’ve discovered that it only takes minutes to put together. To start I use my spiralizer to create my zoodles (zucchini noodles).
Once my zoodles are cut to perfection, I add a tablespoon of olive oil to my saute pan and cook my noodles for about two minutes, just long enough to soften them slightly without taking away the gorgeous color and taste!
Next, I remove my cooked zoodles from my pan and prepare my SeaPak Shrimp Scampi according to the package instructions. I have to say, every time I open the bag, I am hit once again with the amazing aroma of shrimp scampi and my anticipation for a coastal meal can’t help but rise. As my shrimp cook and my sauce fills the pan, my mouth totally begins to water! When my shrimp scampi is almost done, I toss my halved grape tomatoes in to soften them up slightly and coat them with sauce.
As soon as my shrimp turns completely pink, I remove it from the heat, add my zoodles to a plate and top them with my SeaPak Shrimp Scampi and tomatoes. After adding a generous amount of shrimp and tomatoes, I spoon some of the sauce over the top to make sure that every bite is packed full of flavor.
With my dish looking bright, vibrant and absolutely delicious, I sprinkle a few chopped green onions over the top and finish my presentation with a little freshly grated Parmesan cheese.
And just like that, I have a meal that seriously delivers on the coastal flavors that I love so much.
