Over the past few weeks I’ve been experimenting with flavors and mixing things up in the kitchen. I’ve been thinking outside of the box and using flavor combinations in unique ways. And I’ve been adding avocado to everything. I read somewhere recently that eating avocado regularly was a perfect way to add more healthy fat to your diet and while I make a mean bowl of guacamole, I decided I needed to find new ways to use this superfood. At first I added it to salads and topped my meats with it. But then I got to thinking that with the right flavor combination, I could bake with avocado as well. Out of this idea and a little experimentation, I was able to create something amazing – Honey Lime Avocado Baked Donuts! While this may not sound like something you’d think to make, trust me when I say once you try it, you’ll be begging for seconds!
What You Will Need:
2 Cups of Flour
1 and 1/2 Teaspoon of Baking Powder
1 Large Ripe Avocado
2 Tablespoons of Honey
1 and 1/2 Limes
1/2 Cup of Sugar
2 Teaspoons of Vanilla Extract
1 Cup of Plain Almond Milk
1/2 Cup of Confectioners Sugar
How to Make Them:
These simple baked donuts are easy enough for even a baking novice to make and trust me when I say the end result is impressive. I started by preheating my oven to 350 degrees. Then I added my flour and baking powder to the bowl of my mixer and my avocado, honey, juice of one lime and vanilla extract to my Magic Bullet (you can do this step by hand if you prefer).
I wanted to make sure my avocado was really smooth so I used the Magic Bullet to puree all of my ingredients and form a avocado paste.
Then I mixed my sugar into my avocado mixture and added it to my mixer with the flour and baking powder.
I mixed my ingredients together as I slowly added my milk and blended them until I had a smooth batter. Then I spooned two tablespoons of my mixture into each of my greased donut molds.
Into the oven they went for ten minutes until they were golden brown. As soon as they were done baking, I took them out of the oven and immediately popped them onto a cooling rack.
While I let my donuts cool completely, I mixed together my confectioners sugar and the juice of my last half of a lime to create a glaze. Then using a spoon, I drizzled my lime glaze over the top of my honey avocado lime baked donuts and sprinkled a little lime zest on the top.
Just like that I had a unique treat that boasted the healthy fats of avocado, the tart taste of lime and the sweetness of honey.
I have to say, these honey lime avocado baked donuts will be making a repeat appearance in my home very soon because they are truly amazing!
With a more savory flavor with a hint of sweetness, they are perfect with a cup of coffee or tea and are a great way to ensure that even sweet treats have a little something good in them.
