With Labor Day quickly approaching, I’m giving all my favorite dishes a grilled twist. After all, in our home no food is Labor Day worthy unless it’s cooked over an open flame. Because I want to take dishes I love and mix things up a little big with the delicious grilled flavor and marks, I decided that my mission would be to cook every dish I serve at my Labor Day gathering on the grill. After discovering how simple that is on my main dish, I moved on to my sides and came up with a delicious way to create a grilled squash and avocado salad that is sure to thrill all my guests.
What You Will Need:
2 Large Squash
2 Large Semi-Ripe Avocados
2 Teaspoons of Olive Oil
1/2 Teaspoon of Balsmaic Vinegar
1 Teaspoon of Lemon Juice
1 Teaspoon of Dried Cilantro
2 Tablespoons of Feta Cheese
1 Tablespoon of Pine Nuts
Salt and Pepper (to taste)
How to Make It:
To start this delicious grilled dish, I cut my squash in half and poured one teaspoon of my olive oil into a bowl. Then I brushed olive oil on to my squash halves, making sure they were covered.
Next, I repeated the process with my avocados, covering them with olive oil and then adding salt and pepper to tastes to the inside of both my squash and avocado.
With the main ingredients for my squash and avocado salad prepped, I warmed up the grill and place both my squash and avocados face down once my grill had been prepped with cooking spray.
After closing the top, I let them cook for about three minutes and then turned them over, allowing them to cook for another three minutes or until they were still slightly firm but cooked all the way through.
Once my squash and avocados were grilled to perfection, I removed them from the heat and allowed them to cool slightly.
Once they were cool enough to handle, I transferred my squash halves to a cutting board and cut them into cubes.
Next, I used a spoon to “scoop” out my avocados and cut them into cubes as well, adding everything to a bowl once they were cut.
With my squash and avocado cubes ready, I set to work making my dressing. To make it I added my remaining teaspoon of olive oil, balsamic vinegar, lemon juice, salt, pepper and cilantro flakes to a bowl and stirred them well.
I immediately poured my mixture over my prepared squash and avocado and tossed it all until the dressing covered all my squash and avocado cubes.
After transferring my squash and avocado salad to a serving bowl, I added feta crumbles and pine nuts to the top.
Then all that was left to do was set it in the fridge and allow it to chill slightly (for about an hour). By the time the rest of my meal was prepped, my grilled squash and avocado salad was the perfect temperature and ready to serve.
I added a serving spoon and sat back as everyone enjoyed the fresh grilled tastes of this out of the box salad.
It was the perfect compliment to our grilled meal and a great way to add some freshness to our Labor Day celebration.
