September is my favorite time of the year. The weather begins to cool down, the football games start and friends begin to come over for cool evenings full of delicious food on the back porch. Whether we’re entertaining or simply having a family dinner, grilling and eating outdoors is the first thing that comes to my mind each and every day. And the second thing that comes to my mind is what we should make. Since we’ve been experimenting lately with authentic flavors cooked to perfection on the grill, I’ve been mixing things up and thinking outside the box. Yes, we’re still doing classic burgers and steaks but more often now, I’m bring friends and family together with flavorful dishes like my grilled steak stuffed avocados.
Anyone who knows me knows that I adore Mexican inspired recipes completed with my own flare. Add to that the fact that I’d eat steak and avocado for dinner every night of the week and be one happy woman and it only stands to reason that I’d find a way to combine the two perfectly. But, as delicious as a simple combination sounds, I decided it was my mission to add authentic flavors and flare to my grilled steak stuffed avocados. So, on a recent trip to Walmart, I stocked up on avocados, steak and my new secret ingredient that’s perfect for enjoying time with my family and friends; HERDEZ® Salsa.
This fresh and delicious salsa that is centered around authentic flavors is perfect for dipping….but, it’s even more perfect for transforming my new signature dish into absolute perfection!
What You Will Need:
1 (16 oz) Jar of HERDEZ® Salsa Verde
3-4 Ripe Avocados
1 Pound of Steak
2 Medium Zucchini
1 Large Onion
1/4 Cup Crema Fresca
Fresh Cilantro (for garnish)
How to Make It:
The idea behind this recipes if pretty simple in my mind…you stuff anything in an avocado and it’s going to be great! But by incorporating the authentic flavors of HERDEZ® Salsa Verde into every step, I was able to really take this dish to a new level. To start, I pulled my steak out and placed it in a glass dish and then poured about four ounces of HERDEZ® Salsa Verde over the top.
After setting is aside to marinate, I washed my zucchini and onion and cut each of them in half, placing them in a second dish. Again, I poured about four ounces of my salsa verde over the vegetables. Then I place both my steak and the veggies in the fridge and allowed them to marinate for about two hours.
Once my steak and veggies had marinated, I removed them from the fridge, fired up the grill and placed them on.
Since I had gone with a thin steak, my food only needed to be grilled for about four minutes on each side. Then I removed it from the grill and allowed it to cool slightly so that I could cut it up and get ready to stuff my avocados. Once my food was cook enough to work with, I cut up my zucchini and onion and placed them in a bowl.
Next, I sliced my steak and then cut it into cubes, adding them to the same bowl as my vegetables.
After a quick taste test, I knew that my HERDEZ® Salsa Verde was cooked into every bite of my food but I still wanted more! So I grabbed my jar and poured about six more ounces of HERDEZ® Salsa Verde into my steak and veggie mixture.
After stirring everything together well to ensure the authentic flavor I wanted was in every bite, I was ready to start stuffing my avocados.
To prep my avocados, I cut them in half.
After removing the seed, I scooped out some of the filling so that I’d have plenty of room for my steak and veggie mixture and cut off the bottoms of them so that they would lay flat. Then I placed my avocado halves face down on the grill for about four minutes.
After they were grilled to perfection, I removed the from the grill and was ready to start stuffing!
With my prepared mixture of steak and vegetables tossed in HERDEZ® Salsa Verde close at hand, I began spooning the mixture into the hollow cup of each avocado.
By scooping out some of the avocado prior to grilling, I had nice big pockets that allowed me to stuff tons of steak and vegetables inside. Once all of my avocados were filled to the brim with marinated steak and veggies, I added my crema fresca to a bag and piped it on top of each avocado.
Finally I garnished my grilled steak stuffed avocados with my fresh cilantro and my drool worthy creation was complete.
After adding them to the table along with some of our favorite Mexican inspired sides, I was ready to call family and friends out to celebrate a dish that is truly amazing.
As everyone tasted the first bite, it was clear that these were not your run of the mill stuffed avocados. Theses were delicious, filling and bursting with the authentic flavors of HERDEZ® Salsa Verde in every single bite!
As I watched my guests eyes widen in surprise as they reached for a second helping, I knew without a doubt that as we enter the fall season, I’ll be serving this delicious meal time and time again.
