Every year, right around this time, I find myself recommitting to eating better, making smarter choices and in general living a healthier lifestyle. Any of you who read my blog know that I’ve lost (and gained) and lost again quite a bit of weight. And while I kept my journey a little quieter this last year, I’ve been able to drop 65 pounds and finally achieve a balanced diet that I can stick to. For me, that’s meant eating smarter. It’s mean exercise daily (even when I don’t feel like it). But probably one of the biggest keys to my success has been finding ways to indulge without totally getting of track. Now, I’m going to admit that chocolate is my achilles heel. I MUST have it daily. So, instead of trying to give it up (which is never going to work for me), I’ve started creating better for me, rich, delicious recipes that I can actually feel good about eating. And when I recently discovered how absolutely amazing Dark Chocolate Almond Joy Chai Pudding is? Well, let’s just say that I ALWAYS have some in my fridge. And since it’s super easy to make, it’s a treat that fits in perfectly with my busy lifestyle!
This combination of rich, dark chocolate and chai seeds would be amazing alone but with the addition of a little almond and coconut extract, it becomes seriously drool-worthy. The best part is, it totally tastes like a dark chocolate version of an almond joy candy bar (which just happens to be one of my favorites) but is oh, so much better for staying on track with my diet! Here’s how I made it:
What You Will Need:
1 Cup of Unsweetened Almond Milk
1/2 Cup of Chocolate Flavored Almond Milk
1/2 Cup of Chai Seeds
1 Teaspoon of Almond Extract
1 Teaspoon of Coconut Extract
3 Tablespoons of Honey
1/4 Cup of Unsweetened Dark Cacoa Powder
Almond and Coconut Slivers (for Garnish)
How to Make It:
Seriously, this Dark Chocolate Almond Joy Chai Pudding takes five minutes to whip up and then the refrigerator gets to do the rest (total score, right?)! To start, I added both of my almond milks to a bowl and poured in my chai seeds.
Next, I added my cacoa powder, honey and both my almond and coconut extracts.
Once all of my ingredients were in the bowl, I used a whisk (I’ve found this works much better than a spoon in achieving a smooth texture) and whisked everything together until it looked rich and creamy.
Now that all my work was done (easy peasy, right?) I added a top to my bowl and placed it in the refrigerator overnight. The next morning I had a delicious bowl of rich, creamy Dark Chocolate Almond Joy Chai Pudding that I didn’t even feel bad about eating for breakfast!
After adding a serving of my Dark Chocolate Almond Joy Chai Pudding to a small dish, I topped it with almond and coconut slivers and had a dish that fit right in with my better-for-me lifestyle while still tasting absolutely amazing!
Bite by bite, I remembered that eating better doesn’t have to mean giving up the tastes that I love. It just means reinventing them in a way that works for me!
