With school having started back, our laid-back summer schedule has suddenly gotten busy. The kids are here, there and everywhere and this mama is simply trying to keep up with everything while ensuring that I have a delicious dinner on the table each and every night. I’ll tell you that in my home, we eat a lot of Pasta! With two growing boys and a hungry hubby, it’s my go-to choice when I need a quick and easy dinner that is sure to disappear! Recently, I’ve mixed up my pasta dish a little bit though by treating it almost like a pizza and adding fresh veggies and fun toppings to it. The result is a sure-to-disappear Italian Pizza Pasta that’s perfect for busy weeknights and can be whipped up in less than thirty minutes! Want to know how to make it? Sure you do and from one busy mama to another, I’m thrilled to share this sure-fire-dinner-time hit that’s perfect for serving to the entire family!
What You Will Need
1 Box of Rotini Pasta
1 Jar of Pasta Sauce
3-4 Large Zucchini
1 Large Sweet Onion
Plenty of Pepperoni
1 Cup of Shredded Cheese
How to Make It
This simple weeknight meal is so easy to whip up and is always sure to satisfy! To start, I boiled my pasta according to the directions on the box. While my pasta was boiling, I diced my zucchini and onion and added them to a saute pan, cooking them just until the onions were translucent.
As soon as my zucchini and onions were cooked, I added in my jar of pasta sauce and continue to heat the mixture until it was all warm (about 5 to 7 minutes).
As soon as my sauce mixture was ready, I added it to a large bowl and then added my cooked pasta to the top of it.
After stirring my pasta sauce mixture and noodles together, I was ready to start assembling my Italian Pizza Pasta! I started by placing a layer of my pasta mixture into the bottom of a greased casserole dish.
I topped the pasta mixture with half of my cheese.
Next, I added a layer of pepperoni.
I followed this pattern again to add an additional layer of each of my ingredients and fill my casserole dish to the top.
Once my Italian Pizza Pasta was completely assembled, I placed it into the oven on 375 degrees for 15 minutes, just long enough to melt the cheese and crisp the pepperoni so that everything was ooey-gooey delicious!
Then all that was left to do was serve it up to my hungry family for a meal that was a definite hit!

Yesssss. This is the best pasta bake ever! I love the addition of zucchini to the mix. No kid can say no to a recipe like this even if there IS something green in it! WOOT!
Yum, this would make a delicious dinner. Everyone in the family loves pasta, so I imagine everyone would enjoy this. I’d have to leave out the zucchini though, it would freak everyone out. But the onions could stay!
