With the craziness of the school year in full effect, this mama is on a mission to find quick and easy ways to put amazingly flavorful meals on my family table. I’ll be honest and tell you that I keep waiting for our busy scheduled to settle down to allow me to spend more time in the kitchen but it’s just not happening. Dinner is the one time of the day when we can actually all come together so it’s super important to me that I have dishes that turn dinner time into an experience. With this in mind, I’ve been looking through my family cookbooks, trying out new shortcuts and creating easier ways to make some of my classic dishes. Surprisingly, through these efforts I’ve taken some of my family’s favorite dishes and simplified them in a most delicious way, like my quick and easy Shrimp Pasta Primavera!
Shrimp. Pasta. Veggies. Seasonings. It’s a combination that I can never go wrong with. My family adores seafood and I love turning my favorite seafood, like shrimp, into amazing dishes. However, I’ll admit that in the past Shrimp Pasta Primavera has been one of the dishes that I’ve abandoned because of the time it takes to cook. I have to peel the shrimp, cut the veggies, chop and measure out the garlic and herbs. Ain’t nobody got time for that, right? Well, instead of tossing this dish into the “one day when the kids are older” pile, I decided to give it a quick and easy makeover using a few shortcuts and my new favorite McCormick Basil, Oregano, Garlic & Sea Salt All Purpose Seasoning from Walmart! What You Will Need
1 Pound of Shrimp
2 Cups of Frozen Veggies of Your Choice (I recommend choices like squash, asparagus, broccoli, carrots)
1/2 Cup of Chicken Broth
8 Ounces of Pasta
1 Tablespoon of Olive Oil
How to Make It
This quick and easy version of a classic dish can be made in about twenty minutes using a few simple shortcuts and some easy hacks! To start, I placed my water on the stove to boil so that I could prepare my pasta.
TIP: Use a thinner or fresh pasta variety that cooks quickly to speed up this dish.
While my water was coming to a boil, I added my olive oil to a saute pan and threw in my shrimp, cooking them on medium-low heat for about three minutes on each side until they were perfectly pink.
Tip: Use frozen or fresh pre-peeled and deveined shrimp to cut down on prep time!
While my shrimp were cooking, I quickly and easily heated my frozen veggies in the microwave so that they were almost totally cooked but still slightly crunchy (subtract about one minute from the recommended cooking time on the frozen veggies).
Tip: Use a variety of frozen veggies that are already cut to make this dish come together quickly.
Once my shrimp were cooked and my veggies were ready to take out of the microwave,I pulled my pan from the stove, poured in my vegetables and immediately added my chicken stock.
Now, here’s where this dish can go one of two ways. Up until this point I had used no seasonings and I was in danger of serving up a bland meal that definitely didn’t knock it out of the ballpark with my family.
