As I’m getting older, I’m beginning to pay much more attention to my health. This easy breakfast dish is delicious, satisfying and packed with fresh ingredients that are the perfect way to start the day!
What You Will Need
(makes 4 Servings)
2 Large Ripe Avocados (tender but not mushy)
4 Small Eggs
1/2 Cup of Diced Peppers (I like a variety of colors)
1/2 Cup Diced Tomatoes
Pepper to Taste
Fresh Green Onions and Cilantro (for Garnish)
How to Make It
This easy-to-make breakfast dish is filled with all the good stuff while still being super simple to whip up in the mornings. After preheating the oven to 425 degrees, I sliced my avocados in half and removed the seeds.
Now, depending on how much egg I want, I sometimes leave the hole created by the seed as is but since these avocados had smaller seeds, I decided to use my spoon to scoop out some of the soft avocado and make more room for my egg and veggies. Once I had my avocado halves just the way I wanted them, I cracked my eggs (one at a time) into a bowl and then spooned out the yolk of the egg, placing it in the middle of my prepared avocado.
*Tip: Place your avocado halves in a muffin tin to keep them from tipping over while you’re filling and baking them!*
Once my yolks were placed in my avocados, I used the remaining egg white to fill the rest of the avocado up. Then I quickly added some diced peppers to the top of my egg, being careful not to break my yolk.
After grinding some fresh pepper onto the top of my eggs, I placed them in my preheated oven for fifteen to twenty minutes (I like to cook mine a little longer so they are not runny in the middle). As soon as they were cooked the way I wanted them, I removed them from the oven.
Now, I could have eaten my Egg Stuffed Avocados just like this but I’m crazy about big flavors so I decided to top mine with diced tomatoes, green onions and cilantro.
