I’ll fully admit that mornings are a little chaotic in our home. Whether it’s a weekday or the weekend, I seem to find myself scrambling to come up with a meal that the entire family can enjoy. Now that my boys are at different schools and the hubs job has changed slightly, I’ve been rethinking my morning routine and looking for easy ways to make breakfast the most flavorful meal of the day. While most families aim to sit down together for dinner, in my home things are a little different. My oldest often doesn’t get home from after-school sports until late and it’s not uncommon at all for the hubs to have meetings that last well past dinner time. With that in mind, I’ve been working on coming up with easy ways to bring us all together around the breakfast table. Living in a house full of boys (and men), that means I need a flavorful and hearty dish that always delivers. But as an on-the-go mom who also has to manage my time in the mornings, I also need my fabulous breakfast ideas to be quick! My easy Breakfast Enchiladas check all the boxes for my morning needs and are an always cheered for morning meal! With the ability to make them in the morning or make them ahead, I can never go wrong with this delightful dish and since I recently discovered that I could up the flavor and make my Breakfast Enchiladas even more delicious by adding McCormick Good Morning Breakfast Toppers, this easy meal has become my go-to for school mornings and weekends alike! Here’s how I make it!
Easy Breakfast Enchiladas

What You Will Need
8 Whole Wheat Tortillas (Large)
1 Pound of Breakfast Sausage
8 Eggs
1 Tablespoon of Milk
Dash of Salt and Pepper
1 Cup of Diced Peppers
1/2 Cup of Diced Sweet Onion
1 Cup of Shredded Mexican Cheese
1/2 Cup of Queso (Cheese Sauce)
1 Avocado
1/4 Cup of Chopped Cilantro

How to Make It
While I’m going to show you how to make this meal from start to finish, please take note of the direction change to turn it into an easy make-ahead breakfast. To start my easy Breakfast Enchiladas, I added my breakfast sausage to a pan and cooked it until no pink showed and then drained it, reserving a teaspoon of my sausage grease.
After added the grease back to my pan, I quickly added in my onions and peppers and cooked them over medium-high heat until they became translucent.
With my onions and peppers ready, I cracked my eggs into a bowl and whisked them together with my milk, salt and pepper. As soon as they were light and fluffy, I added them to my pan with my peppers and onions, scrambling the ingredients together until the eggs were almost completely cooked but still looked a little damp.
I quickly removed my eggs from the stove and mixed back in my breakfast sausage to complete the filling for my Breakfast Enchiladas.
Next, I laid out my whole wheat tortillas and added about a half of a cup of my egg and sausage mixture down the middle of each one. Once I had added my eggs to all of my tortillas, I sprinkled my shredded cheese evenly between all of the tortillas and rolled them up, placing them seam down into my lightly greased baking dish.
NOTE: If you want to make these ahead, this is where you will cover your dish with aluminum foil and place it in the refrigerator over night. In the morning, simply follow the remainder of step to complete your dish.
With my Breakfast Enchiladas in place in my baking dish, I drizzled my queso over the top.
Finally, I placed them into my oven on 350 degrees for about 30 minutes, just until the sides of the tortillas began to brown and the cheese was perfectly melted.
After removing my easy breakfast enchiladas from the oven, I let them cool slightly and then topped them with the finishing touches that makes this dish truly amazing! I added cubed avocado, a little cilantro and my flavorful secret ingredient, McCormick Good Morning Breakfast Toppers in Southwest Chipolte Flavor! This looks like something I’d like to try. I have to eat gluten free and the corn tortillas I buy keep falling apart so this will be a great way to use them. I normally buy my spices in the bulk section because it’s cheaper but I don’t mind trying this new McCormick topper plus the container would make a great upcycle to hold spices or something else.
