With the new year upon us, I’m trying out new recipes and enjoying finding different ways to make my favorite meals. Most of you know that my son was diagnosed with Type 1 Diabetes last year and as part of that, I’ve been in search of lower carb alternatives to some of our favorite dishes. He just happens to adore pizza so of course I needed to find a way to make his favorite meal without all the extra carbs included. After a few trials and quite a bit of error, I’ve found an amazing way to enjoy pizza even if you’re on a low-carb diet with my Low Carb Mediterranean Pizza!
This easy to make pizza boasts big flavors without all the fat and carbs that traditional pizza can have. In fact, we enjoy it so much that it has totally replaced traditional pizza in our home. Whether you’re trying to live a lower-carb lifestyle for health reasons or just because, I encourage you to try out this amazingly simple yet simply delicious Low Carb Mediterranean Pizza!
What You Will Need
(for the crust)
1 and 1/2 Cups of Almond Flour
3/4 Cups of Shredded Cheese
1/2 Teaspoon of Baking Powder
1 Large Egg
1/4 Cup of Water
1 Tablespoon of Olive Oil
Seasonings (I recommend Basil, Oregano and Garlic)
(for the toppings)
1/2 Tablespoon of Olive Oil
1 Cup of Fresh Spinach
1/2 Cup of Artichoke Hearts
1/4 Cup of Sliced Olives
1/2 Cup of Feta Cheese
How to Make It
My favorite part about this low carb Mediterranean Pizza is that there is no need to let the crust rise or make it ahead of time. Instead, it can quickly be whipped up any time you’re in the mood for a crazy delicious low carb meal. To start, I added my egg, water and olive oil to a small bowl and whisked it together.
Next, I added my almond flour, cheese, baking powder and spices to a second bowl and combined those ingredients well.
With my two bowls ready, I poured my wet ingredients into my dry ingredients and stirred them gently until they reached a dough-like consistency.
As soon as I had a formed dough, I transferred it to a piece of parchment paper and added a second piece of parchment paper to the top. Then I used my rolling pin to roll out my low carb pizza dough.
Keep in mind, I didn’t get a perfect shape using my rolling pin but after using my fingers to create round edges, I was able to transfer my low carb pizza crust to a greased pizza pan.
Into the oven my crust went on 375 for twenty minutes, just into it was brown and the cheese in it was bubbly. I then removed it from the oven and allowed it to cool for about fifteen minutes to allow the crust to crisp (this step is super important if you want a crispy crust).
Once my crust was cool, I brushed it with olive oil and added my toppings of spinach, artichoke hearts, olives and feta cheese. I have found that there is no need for sauce on this crust and it’s a great way to cut some of the sugar out!
Back into the oven my crust went for about eight minutes to warm all my toppings and slightly melt my feta cheese.
Once I removed my low carb Mediterranean Pizza from the oven, I sliced it into pieces and it was ready to serve!
