For quite some time now, my garlic shrimp pasta has been a must on my weekly meal plan but with tons of butter, a lot of noodles and quite a bit of cheese, it’s not exactly in line with our better eating goals for the new year. However, I knew from experience that I could take the basic flavors that make this dish amazing and build on them to create a lighter version!
What You Will Need
1 and 1/2 Pounds of Shrimp (Peeled and Deveined)
1 Teaspoon of Extra Virgin Olive Oil
3 Large Zucchini
1/2 Cup of NAKANO Seasoned Rice Vinegar in Roasted Garlic
1/4 Cup of Light Feta Cheese
How to Make It
The only thing better than how delicious this dish is happens to be how easy it is to make! This quick, 30-minute meal has become a family in my household and that’s just fine by me because it makes putting a better-for-us weeknight dinner on the table super simple! To start, I needed to make my favorite new year substitution for noodles….ZOODLES! Seriously, this is my go to method right now of cutting carbs and lightening up some of my favorite pasta dishes and the crunch that zoodles add are just amazing! I have a spiralizer to make them quickly and easily but can also find them pre-made at the grocery store.
Once my zoodles were made, I added them to a bowl and set them aside. Next, I added my shrimp to a sauté pan with my olive oil and cooked them just long enough to turn them pink (about 3-4 minutes).
As soon as my shrimp were pink, I poured my zoodles into my pan.
Now, this is where things really get delicious! In the past, butter and garlic would have been my next steps in this simple dish. However, with my desire to create a better-for-me meal in the new year, I decided to substitute NAKANO Seasoned Rice Vinegar!

Just like that I had a flavorful dish that didn’t feel like a sacrifice!
