With Easter quickly approaching, I’ve been on the hunt for fun recipes that capture the feeling of Easter and thrill my whole family. Anyone who knows me knows that I love to whip up delicious holiday-themed treats that are just as delicious as they are fun. So, it only made sense to take the theme of Easter and make fun Easter Treat Cakes filled with carrot cake and shaped to look like carrots. If you’re looking for a tasty way to add a little fun to your Easter celebrations, I highly encourage you to whip up these tasty Easter Treat Cakes!
What You Will Need
1 Box of Carrot Cake Mix
1 Cup of Unsalted Sweet Cream Butter (Softened)
1 Cup of Whole Milk
3 Large Eggs
2 Teaspoons of Vanilla Extract
1/2 Cup of Shredded Carrots
1/2 Cup of Chopped Pecans
1 Container of Cream Cheese Icing
1 Bag of Bright White Candy Melts
1 Cup of Green Candy Melts
1/2 Cup of Orange Candy Melts
3 Tablespoons of Coconut Oil
3 Disposable Piping Bags
1 Small Cookie Sheet lined with Parchment Paper
1 Medium Cookie Sheet lined with Parchment Paper
How to Make It
Don’t let all the ingredients fool you…these Easter Treat Cakes are actually pretty simple to make and they are so much fun that you’ll definitely want to whip them up with your kids! To start, I preheated my oven to 350 degrees and lined a cupcake tin with liners. Then, in my mixer, I beat together my cake mix, butter, milk, vanilla and eggs on medium speed for about two minutes. Once my cake mixture was mixed completely, I added in my shredded carrots and chopped pecans and poured the mixture immediately into my cupcake lines, filling each one about two thirds of the way full. After baking them in my preheated oven for about 20 minutes, I allowed them to cool completely. Then I removed them from the cupcake liners and crumbled the cake into a large mixing bowl.
Once my cake was crumbled into my bowl, I added in two spoonfuls of cream cheese frosting and mixed it all together until I had a sticky, dough-like mixture that I could easily mold into shapes.
With my cake and icing mixture ready, I flattened it out onto a baking sheet (these non-stick baking sheets are amazing!) and set it aside while I used a double boiler to melt my green candy melts. Once my candy melts were melted, I scooped them into a disposable piping bag and cut off the top, piping stems onto my small cookie sheet and allowing them to harden. While my cookie stems were hardening, I used a carrot cookie cutter to cut out carrots from the my cake mixture.
After cutting off the tops of my carrots so that I had the perfect shape for my Easter Treat Cakes, I melted my white candy melts, mixing in my coconut oil to make the mixture more liquid for covering my carrots. With my white candy melt mixture ready, I placed my carrot cake shapes onto a wire cooling rack and gently inserted the stems into the top of each one.
Next, I used my melted white chocolate mixture to cover each of my Easter Treat Cakes completely, tapping them gently to remove any excess coating from them. Once I had a white surface with green stems, I simply melted my orange candy melts, added them to a piping bag, cut off the tip and drizzled the orange over the white surface, to give the look of an actual carrot.
After allowing everything to harden, I had the perfect Easter Treat Cakes that are just as cute as they are delicious! And the best part is, they were made with love from my very own kitchen!
