These last few weeks I’ve been dreaming of Spring. As we approach Easter and Spring Break and all of my favorite, warmer times of the year, I can’t stop myself from wanting to add a touch of Spring to everything. I want my home filled with flowers and my kitchen filled with bright, mouthwatering flavors. That’s why I recently decided to take my family’s favorite Pillsbury Grands!™ Refrigerated Cinnamon Rolls with Cream Cheese Icing and give them a Spring makeover. Meet my newest breakfast obsession….Lemon Blueberry Cheesecake Cinnamon Roll Cups!
Now, if you’re a cinnamon roll lover, you already know that Pillsbury Grands!™ Refrigerated Cinnamon Rolls are pretty much perfection. They are what my family asks for every Saturday morning! And while I’ll fully admit that they are pretty amazing just like they are, my Spring fever had me wanting to give them a makeover. As I thought through my favorite Spring and Easter flavors, I kept coming back to lemon and blueberry. For years, we’ve had a lemon and blueberry icebox pie as part of our Easter celebrations so those flavors to us just scream Easter time. However, I wanted to take those classic flavors that we associate with Easter and find a way to incorporate them into my cinnamon rolls. After seeing a Pillsbury recipe for Carrot Cheesecake Cinnamon Roll Cups, inspiration hit and I knew that I could use the same basic concept to create my ultimate Easter recipe of Lemon Blueberry Cheesecake Cinnamon Roll Cups! Here’s how I did it with a little help from Pillsbury Grands! Refrigerated Cinnamon Rolls with Cream Cheese Icing from Walmart!
What You Will Need
(Makes 10 Lemon Blueberry Cheesecake Cinnamon Roll Cups)
1 Can (17.5 Ounce) Pillsbury Grands!™ Refrigerated Cinnamon Rolls with Cream Cheese Icing
6 Ounces of Cream Cheese (Softened)
3/4 of a Cup of Confectioner’s Sugar
1 Tablespoon of Lemon Extract
3/4 Cup of Fresh Blueberries
Lemon Zest for Garnish
How to Make It
These Lemon Blueberry Cheesecake Cinnamon Roll Cups are so easy to make and they are a perfect Easter morning breakfast! To start, I opened my cinnamon rolls and rolled them out flat, cutting each strip in half.
Once I had cut all of my strips in half, I greased 10 cups in my cupcake pan and the rolled the half rolls back up, placing one into each of my greased tins.
Now, this is where things got fun. To create my cups, I gently pushed down on the center of my cinnamon rolls, creating a cup shape that I could fill with my Lemon Blueberry Cheesecake filling.
Once I had created the correct shape for all my cups, I pulled out my mixer and added in my softened cream cheese. After beating it on low for about a minute, I poured in my confectioner’s sugar and lemon extract, mixing it all together until I had a creamy filling for my cups. Finally, I poured in my fresh blueberries and gently folded them into my mixture.
With my Lemon Blueberry Cheesecake filling complete, I simply spooned it into my cinnamon roll cups and placed them immediately into my oven that was preheated to 350 degrees for eighteen minutes.
Now, if you think cinnamon rolls smell great baking, THESE Lemon Blueberry Cheesecake Cinnamon Roll cups take things to a whole new level! Imagine baking cinnamon rolls, blueberry muffins and lemon scones at all once…heaven I tell ya! Once my Lemon Blueberry Cheesecake Cinnamon Roll Cups were baked to golden brown, I removed them from the oven and transferred them to a cooling rack.
After allowing them to cool for about ten minutes, I removed the top from my cream cheese icing, heated it in the microwave for about 10 seconds and then drizzled it over the top of my cinnamon roll cups.
Finally, I zested my lemon and sprinkled the zest on top for a finishing touch. Let me tell you, once I had completed my final step, I knew that I had achieved Easter perfection!
