It’s hard to believe that summer is already here. Around my part of the country, Memorial Day weekend marks the end of school, the start of summer and the perfect reason to whip up easy no bake desserts. You see, for us the summer months are sweet. There are days spent by the pool. There are evenings cooking out on the deck. And there are of course amazing no-bake desserts to make those moments better. Now, I’ll be honest and admit that I don’t cook a lot during the summer. But I am the queen of my kitchen when it comes to no bake desserts. So, with Memorial Day quickly approaching, I figured it was time to dust off some of my favorite no bake recipes and whip up my easy and amazingly delicious No Bake Cheesecake Cups made with NILLA Wafers to celebrate!
While winter might be about warm, gooey desserts, summer is without a doubt focused on cool and light treats that pair perfectly with fresh fruit and help finish off warm summer days in the most delicious way. I’ve been making no bake cheesecake for as long as I can remember during the summer months but I recently discovered that when I pair my easy cheesecake filling with the amazing taste of NILLA Wafers from Walmart and fresh fruit, it’s easy to whip up a party! In fact, NILLA Wafers and Lemon NILLA Wafers are becoming my go-to for summer creations because they are a great, quick, no bake solution for the hot summer months. Plus, when I incorporate them into my no bake recipes, the options are endless for delicious summer recipes that everyone adores. So, let me show you exactly how I used my beloved NILLA Wafers to create these can’t miss No Bake Cheesecake Cups!
- 54 NILLA Wafers
- 16 Ounces of Cream Cheese
- 1 Cup of Sugar
- 4 Tablespoons of Vanilla Extract
- 2 Cups of Heavy Whipping Cream
- Fresh Berries
- Add cream cheese and sugar to the mixer and whisk it together until light and fluffy.
- Mix in vanilla extract and remove from the mixture.
- Add whipped cream to the mixer and whisk until light and fully.
- Mix cream cheese mixture into whipped cream.
- Place 2 NILLA Wafers at the bottom of each paper treat cup.
- Fill the cup with the cheesecake mixture.
- Chill for 2 hours.
- Top with a NILLA Wafer and fresh berries.
- Serve and enjoy!

These No Bake Cheesecake Cups are one of the easiest desserts you’ll whip up this summer and they are incredibly delicious! To start, I added my cream cheese and sugar to my mixture and creamed it together. As soon as it was creamy, I mixed in my vanilla extract and set the mixture aside. After cleaning out my bowl, I added my heavy whipping cream to the mixer and whisked it until it formed thick peaks. As soon as my whipping cream was ready, I mixed back in my cream cheese mixture and blended it all together just enough to ensure that my cheesecake filling was perfectly creamy.
With my cheesecake filling prepared, I was ready to assemble my No Bake Cheesecake Cups. To start, I laid out some cute little snack cups on a baking sheet (using a baking sheet lets me transfer my No Bake Cheesecake Cups to the fridge easily and quickly). Then I added two NILLA Wafers to the bottom of each cup.
Next, I scooped my cheesecake mixture onto the top of the NILLA Wafers, filling the cups about 2/3 of the way full and gently tapping them to help the cheesecake filling settle.
I quickly transferred my No Bake Cheesecake Cups to the refrigerator and let them chill for about two hours. Once they were good and cold, I finished them off my adding a NILLA Wafer and fresh fruit to the top of each one for a cute dessert that’s the perfect size for enjoying by yourself or a great size for sharing with someone you love!
By using a red, white and blue color scheme on these No Bake Cheesecake Cups, I ensured they are perfect for our Memorial Day weekend festivities or really any other summer celebration.
