On my mission to become my best me, I’ve done a few things differently. I’ve been more intentional about how I spend my day and what I put in my body. After loading up my cart with all the amazing savings (click here to find them all!), I decided to whip up my favorite Superfood Salad with Simple Acaí Vinaigrette using my ingredients from Publix and share it with all of you! This simple salad is packed with flavor, full of all things good-for-you and a perfect way to fuel your day and inspire better choices!
What You Will Need
(This made a HUGE salad and is the perfect size for sharing!)

10 Ounces of organicgirl Baby Kale
12 Ounces of Tyson® Fully Cooked Grilled Chicken Breast Strips
1/2 Cup of Cooked Mahatma® Organic Brown Rice
1/2 Cup of Fresh Blueberries
1/2 Cup of Fresh Raspberries
1/2 Cup of Almonds
(for the Acai Vinaigrette)
1/3 Cup of Olive Oil
3 Tablespoons of Apple Cider Vinegar
2 Tablespoons of Water
2 Pouches of Sambazon® Açaí Superfruit
Salt and Pepper
How to Make It
For me, fueling my body with better-for-me foods helps me follow through on all my other wellness goals…like exercising more, taking time to relax and drinking more water. That’s why it’s very important for me to have ingredients on hand that help me whip up meals like this one! This Superfood Salad with Simple Acaí Vinaigrette is so easy to throw together even when I’m short on time and gives me the energy boost that I need to be my best me every day. To start my Superfood Salad with Simple Acaí Vinaigrette, I of course needed to make my easy dressing (trust me when I say you’ll want to have this dressing on hand to top, well, everything!). I simply added my olive oil, apple cider vinegar, water, Sambazon Açaí Superfruit and salt and pepper to my blender and mixed it all well. I then transferred it to a dressing container and placed it in the fridge to keep it nice and cool and refreshing.
With my Acaí Vinaigrette made, I moved on to throwing together a quick Superfood Salad that’s so delicious and also the perfect way to fuel my day. To make it, I simply added my organicgirl Baby Kale to a bowl and topped it with my Tyson Fully Cooked Grilled Chicken Breast Strips, Mahatma Organic Brown Rice, blueberries, raspberries and almonds.
Once my salad was ready, I drizzled my Acaí Vinaigrette over the top for a dish that is light, delicious and fits in with all my wellness goals.
