I can not even begin to explain how excited I am that summer is finally here. The kids are out of school. Early bed times are a thing of the past. We can sit outside on the back porch laughing with friends until the sun goes down and the fireflies come out. There are so many things I love about summer but perhaps my favorite aspect is that during the summer, we abandon the kitchen (for the most part) and fire up the grill to create insanely good meals. We make burgers. We serve up chicken. But our truly favorite summer meal is ribs! There is just something about ribs that are grilled to perfection and served immediately that screams summer. That’s why I’ve been perfecting my rib recipes. I know the hubs has got things mastered when it comes to manning the grill so as long as I come up with the perfect marinade or sauce and use Smithfield Extra Tender Pork Back Ribs, creating perfectly tender, fall-off-the-bones ribs is a breeze! In fact, just last weekend I decided to spice up our summer and whipped up the best ever Honey Jalapeño Grilled Ribs! Trust me….this is a must for your summer grilling routine and I’m going to show you just how easy they are to make!
Now, it’s only fair to tell you that the secret weapon to really amazing ribs is using Smithfield Extra Tender Pork Back Ribs! Now that we’ve got the most important aspect of grilling perfect ribs out of the way, let me share with you how I take the tender goodness of Smithfield Extra Tender Pork Back Ribs and add my own sweet and spicy flare to create what has been declared the best rib recipe ever by numerous members of my family. These Honey Jalapeño Grilled Ribs are marinated and then basted and cooked in my homemade Honey Jalapeño Barbecue Sauce to create absolute perfection!
- 1 Rack of Smithfield Extra Tender Pork Back Ribs from Walmart
- 1 Teaspoon of Smoke Seasoning
- 1 Cup of Ketchup
- 1 Cup of Honey
- ⅓ Cup of Spicy Mustard
- 1 Large Jalapeño (seeds removed and diced)
- ¼ Cup of Balsamic Vinegar
- 3 Teaspoons of Tabasco Sauce
- ½ Cup of Brown Sugar
- 1 Teaspoon of Soy Sauce
- 1 Tablespoon of Fresh Minced Garlic
- 1 Tablespoon of Worcestershire Sauce
- Salt and Pepper to Taste
- Add ¼ Cup of Brown Sugar, 2 Teaspoons of Tabasco Sauce and 1 Teaspoon of smoke seasoning to a bowl.
- Mix these ingredients together and rub them into the Smithfield Pork Back Ribs.
- Allow to Marinate for 1 hour.
- Add all remaning ingredients to a saucepan and mix them together.
- Simmer mixture of low heat for about 30 minutes.
- Remove from the stove and chill until ready to use.
- Once ribs are marinated, heat grill on low.
- Cook ribs for 20 minutes on each side, basting with the barbecue sauce.
- One ribs have reached an internal temperature of 300 degrees, remove them from the grill.
- Top with Honey Jalapeño Barbecue Sauce, honey and Jalapeño slices.
- Serve and enjoy!
I kid you not when I say that you can’t help but create amazing ribs when you start off with Smithfield Extra Tender Pork Back Ribs and while it’s hard to improve on the perfection they have already created, I think I was able to do just that with my Honey Jalapeño Barbecue Sauce. To start, I marinated my Smithfield Extra Tender Pork Back Ribs in a mixture of 1/4 cup of brown sugar, 2 teaspoons of Tabasco and 1 teaspoon of smoke seasoning. I generally like to put this seasoning on early in the day and just let my ribs soak in it but really, an hour is all it takes to get the amazing flavor in every bite. While my ribs were marinating, I set to work creating my Honey Jalapeño Barbecue Sauce. While you might think making your own barbecue sauce is hard, much like getting the perfect grilled ribs every time, it’s not! I simply added my remaining ingredients to a sauce pan, stirred them all together and simmered them over low heat on my stove.
After about 30 minutes, my Honey Jalapeño Barbecue Sauce was ready to be used to create mouthwatering Honey Jalapeño Grilled Ribs! (Note: If you’re wanting to make your barbecue sauce ahead, simply cook it, put it in a container and keep it in the fridge until you’re ready to cook.) My hubby knows that the secret to making Smithfield Extra Tender Pork Back Ribs great is cooking them low and slow so I simply set him up on the outdoor grill with some of my Honey Jalapeño Barbecue Sauce and a basting brush and let him cook away. After about 20 minutes on each side (with basting happening the whole time), the ribs have reached an internal temperature of 300 degrees and are ready to be served..almost!
This Honey Jalapeño Barbecue Sauce is so good that after I remove my perfectly cooked ribs from the grill, I like to drizzle a little more over the top.
When I really want to make things tasty, I drizzle a little honey over my finished ribs as well and add on slices of Jalapeño for a dish that looks AND tastes amazing!
