It’s no secret that my hubby is the grill master and that I love to create amazing recipes that enhance his skills on the grill. While we grill a variety of meats pretty much every night during the summer months, I’ll admit that grilled ribs are our favorite. There is just something about putting a tender rack of Smithfield Extra Tender Pork Back Ribs on a hot grill and watching them sizzle until they are perfectly cooked that makes me happy. While most people are intimidated by ribs, we’ve discovered that they truly are easy to cook to perfection. That’s why I’ve been whipping up delicious rib recipes for a variety of occasions this summer. I truly think everyone needs to have a go-to rib recipe for any night of the week, whether it’s to bring your family together or to entertain the entire neighborhood. While we’ve made some delicious ribs already this summer, I recently tried out a new recipe that I came up with and I’m truly in love! - Smithfield Extra Tender Pork Back Ribs
- 2 Tablespoons Brown Sugar
- 2 Tablespoons Ground Dried Chipolte Pepper
- 1 Tablespoon Paprika
- 1 Tablespoon Dried Mustard
- 1 Tablespoon Ground Cumin
- Dash of Sea Salt
- 2 Large Mangos
- ½ Cup of Orange Juice
- ¼ Teaspoon of Ground Cloves
- ¼ Teaspoon of Ground Ginger
- ¼ Cup of Orange Blossom Honey
- 1 Tablepooon of Tabasco Sauce
- 2 Tablespoons of Fresh Cut Cilantro
- ½ Cup of Diced Sweet Onion
- Mix together your brown sugar, chipolte pepper, paprika, dried mustard, cumin and sea salt.
- Rub the mixture into your ribs, coating them generously.
- Place ribs on a preheated grill and cook for 20 minutes per side until internal temperature reaches 300 degrees.
- During last five minutes, baste on the Mango Glaze.
- Top with Fresh Mango Salsa and serve.
While these Chipotle Rubbed Ribs with Mango Glaze sounds complicated, they are actually so easy to make and bursting with flavor! In my mind, the key to making them amazing is starting with Smithfield Extra Tender Pork Back Ribs from Walmart. Available in the refrigerated section of your local Walmart, these ribs are used by Champion Pitmasters in competitions and on their backyard grills because pitmasters know that the quality of the meat matters most and Smithfield Fresh Pork is the best. We happened to find our ribs in the middle coolers at our Walmart because they were on special for summer grilling (hint, hint)!
Once we had stocked up on our Smithfield Extra Tender Pork Back Ribs, all we needed was a grill and a few ingredients to make the perfect, fall-off-the-bone, flavorful ribs for summer.
After taking my Smithfield Extra Tender Pork Back Ribs out of the package, I quickly mixed together my brown sugar, dried chipolte powder, paprika, dried mustard, cumin and sea salt to create my chipotle rib rub.
After mixing my spices together, I massaged the chipotle rib rub into my ribs and then immediately handed them over to the hubby to put on our preheated grill. We wanted the rub to form a spicy crust so we grilled the ribs for 20 minutes on each side until the internal temperature was 300. While he was grilling the ribs, I went to work creating the Mango Glaze. After chopping up one of my mangos, I added the pieces to a pan with my orange juice, brought it to a boil and then cooked it down until the mangos were soft and most of the liquid has been absorbed (about 20 minutes).
Once my mangos were soft, I transferred my mixture to the blender and blended it until I had a smooth consistency.
I then returned it to my pot and added my ginger, cloves and honey and brought it to a boil. As soon as the glaze started to caramelize (you’ll see crystals on the side of your pot), I transferred it to a container and handed it off the to hubs.
He then used it during the last five minutes of grilling to baste onto our Smithfield Extra Tender Pork Back Ribs, complimenting the spicy chipolte crust that our rub created with the sweet taste of the mango glaze.
Once our ribs were done, we removed them from the grill and while he cut them, I diced up my second mango, added in my diced onion and cilantro and mixed it all together to create a fresh mango salsa to top our Chipolte Rubbed Ribs with Mango Glaze. Once it was ready, I simply spooned it over our perfectly cooked ribs and my creation was complete.
These easy Chipotle Rubbed Ribs with Mango Glaze were so simply to make and by using Smithfield Fresh Pork from Walmart, I am assured of tender, delicious ribs that are perfect any night of the week on the grill! While I made these as a weeknight meal for my family, I know that they will be making repeat appearances when we have gatherings with friends and family in the coming summer months.

Wow, another awesome rib recipe that I’ll have to share with my mom. I really have to look for Smithfield ribs. I don’t know a lot about ribs because I don’t eat beef or pork, yet my mom thought it would be a good idea to send me out for them for her. I bought some weird boneless things that weren’t exactly what she had in mind, lol. I guess they were still good, but not the same as eating it off the bone.
