Summer is my favorite time of the year. Gone are the busy schedules of the school year and here are the lazy, hazy days spent outdoors from the time the sun comes up until long after it’s set. While I run a pretty tight ship so to speak during the school year, during the three long, glorious months of summer all the rules go out the window and our main priority becomes having fun. The kids love that instead of calling them in for bed, I encourage them to play a little longer as they chase lightening bugs and their laughter echoes through the yard. They adore that for a few months I encourage dirty hands and feet and sun kissed skin that leaves them smelling like summer when I tuck them in at night. But more than anything, they treasure afternoons spent outside in the sun with my creation of Sweet and Sour Ice Cream running down their hands and dripping onto their bare feet as they savor a treat which truly captures the spirit of summer.
I’ll fully admit that I’m that mom who kicks my kids out the door on summer mornings and tells them to stay out there till after sunset. Now, before you start thinking that I’m just trying to get them out of my hair, let me clarify that I’m right out there with them. During the summer I love saying goodbye to the video games and TV and instead saying hello to an endless variety of memories that can be created outdoors. We get up in the mornings, squirm into our swimsuits, lather on the sunscreen and head out for any number of adventures. Sometimes we play in the river. Other times we spend the day running through the sprinkler in our own backyard. Still other days we float the day away in the pool as the cool water washes over our sun kissed skin. It’s no stretch at all to say that most of our summer days are enjoyed outdoors and while it’s absolute perfection, those days in the sun call for a cool treat that’s sweet as summer but with a surprising sour twist. That’s why I’ve made sure to have homemade Sweet and Sour Ice Cream made with MIKE AND IKE Mega Mix Sour on hand at all times this summer. It’s a refreshing treat that’s perfect for hot summer days and I’m excited to show you how to make it.
- 2 and ½ Cups of Half and Half
- 2 and ½ Cups of Heavy Whipping Cream
- 8 Egg Yolks
- 1 Cup of Sugar
- 5 Teaspoons of Vanilla Extract
- ⅛ Teaspoon of Salt
- 2 Boxes of MIKE AND IKE Mega Mix Sour from Walmart
- To create your ice cream base, add the half and half to a sauce pan and heat over medium heat until very hot but not boiling. Remove from heat.
- Add the egg yolks and sugar to your blender and combine them well.
- Pour in your hot half and half a little at a time while continuing to mix.
- Transfer your mixture back to the saucepan and heat until small bubble start on the top but it is not boiling.
- Pour your hot mixture into a bowl along with your whipping cream, vanilla extract and salt.
- Mix together and chill for 24 hours.
- Add your mixture to an ice cream maker and churn until you have a frozen yogurt consistency.
- Mix in 1 and ½ boxes of MIKE AND IKE Mega Mix Sour candy.
- Freeze for 2 to 4 hours.
- Scoop ice cream out into ice cream cones and top with more MIKE AND IKE Mega Mix Sour.
This easy and perfect for summer Sweet and Sour Ice Cream can be made in any ice cream maker and is a HUGE hit with kids of all ages. I love to whip up a batch once every few weeks and let my kids enjoy it while they soak in the summer sun. To start this fun ice cream, you will need to make an ice cream base. I use a french vanilla base because it pairs so perfectly with the taste of new MIKE AND IKE Mega Mix Sour that are available exclusively at most Walmart stores. To create my base, I simply add my half and half to a sauce pan and heat it until it’s very hot but not boiling. Next, I blend together my egg yolks and sugar in my mixer and slowly pour my hot half and half back in, mixing all the ingredients the whole time. After transferring the contents of my mixer back to the saucepan, I heat it until bubbles begin to form but remove it from the heat before it starts to boil. I immediately transfer it to a large bowl and mix in my heavy whipping cream, vanilla and salt. After chilling it in the fridge for 24 hours, I pour it into my ice cream maker and churn it until it reaches a frozen yogurt consistency.
Then, things get really tasty!
While the sweetness of this ice cream is good for summer, balancing it with a little sour is what really makes it perfect! To do this, I mix in one and half boxes of MIKE AND IKE Mega Mix Sour (but not before the kids enjoy the taste of these colorful cylinder snacks that have just the right amount of tang!).
After stirring my MIKE AND IKE Mega Mix Sour into my churned ice cream, I pour it into a container and freeze it for 2 to 4 hours, just long enough to make it where it melts at just the right pace when enjoyed outside in the sunshine.
After my Sweet and Sour Ice Cream is frozen to perfectly, I head outside, call the kids and scoop it into cones.
Of course I then top it with my remaining MIKE AND IKE Mega Mix Sour and watch as they lay by the creek or explore in the woods with Sweet and Sour Ice Cream in hand.
