With school about to be back in session, I’m looking forward to life regaining a little bit of normalcy. That’s why I just had to share this Ginger Soy Chicken Lettuce Cups recipe that is not only low carb but it takes less than 5 minutes to make! Think I’m kidding? I’m totally not so be sure to grab the recipe below!
Truth: this is one of my favorite lunches right now because it’s so tasty and so easy to make! But before I share how to make it, I need to introduce you to the main ingredient that I’m crushing on hard. Chances are pretty good that if you’re like me, you’re familiar with StarKist®‘s Tuna and Salmon Creations®. There’s no doubt that they have been a staple in my pantry for quite some time. While I totally adore them, I’ll be honest and tell you that chicken is my protein of choice. - 3 Pouches of StarKist® Chicken Creations™ Ginger Soy
- ¼ Cup of Diced Water Chestnuts
- ¼ Cup of Matchstick Carrots
- ⅓ Cup of Diced Green Onions
- 4-6 Pieces of Butterhead Lettuce
- Open the pouches of StarKist® Chicken Creations™ Ginger Soy and add them to a bowl.
- Mix in the water chestnuts, carrots and green onions and stir well.
- Spoon two large tablespoons of the mixture onto each piece of lettuce.
- Top with additional green onions and enjoy!
Since all the seasoning that are required for this recipe are in the StarKist® Chicken Creations™ Ginger Soy pouch, it really could not be any easier to make! I simply emptied my entire pouches into a bowl and then added my water chestnuts, matchstick carrots and diced green onions.
The sauce from the pouch was just the right amount to coat everything perfectly as I stirred it together and ensure that every bite of my Ginger Soy Chicken Lettuce Cups are perfection.
Once I had stirred together my StarKist® Chicken Creations™ Ginger Soy with my other simple ingredients, I laid out my butterhead lettuce and spooned my mixture onto each piece.
After topping my Ginger Soy Chicken Lettuce Cups with a sprinkle of green onions, my lunch time creation was complete and did I mention, totally delicious?
