Now that fall has arrived (holla!) I’m enjoying creating warm meals filled with some of my favorite fall veggies. For me, dinners during this cooler time of the year are all about warmth and comfort. I crave tastes that have that cooked-all-day flavor and dishes that warm me from the inside and leave me feeling like I’ve been wrapped in love. While these tasty dishes warm my belly (and my mood after a long, cold day) the truth of the matter is, I don’t have all day to cook in the flavors of fall. Instead, I’ve discovered the easiest and best tasting way to give my food those flavors that we all love and I’m going to tell you exactly how I do it while sharing how I make the must-have fall dish of easy Garlic Shrimp and Veggies! It’s only fair to admit that when I say fall I think of butternut squash, leeks, onions and the like cooked into saucy dishes that can be served over warm rice. It’s just what fall tastes like to me. However, anyone who cooks veggies very often knows that getting that flavorful broth-like taste can be hard…until now. You see, where in the past I’ve been frustrated with broths that have expired before I can used all of them or cubes that can potentially turn my favorite dishes gritty or even worse, not dissolve completely leaving an unexpected (and unwanted) surprise in someone’s dinner, I’ve now discovered that Better Than Bouillon gives me the best of both worlds and allows me to make basic stock broths or add flavor to my favorite dishes in a way that is so easy to use! While the Chicken flavor is great for chicken and dumplings and the Beef flavor makes amazing flank steak, I’m probably most in love at the moment with Better Than Bouillon Garlic base. With just one spoon full of this easy to use seasoning, I can transform my veggies and create my easy Garlic Shrimp and Veggies which are uh-mazingly delicious! Here’s how I do it!
- 1 Tablespoon of Better Than Bouillon Garlic Base
- 1 Tablespoon of Better Than Bouillon Seasoned Vegetable Base
- 1 Pound of Shrimp (Peeled and Deveined)
- 1 Medium Size Butternut Squash
- 1 Large Red Onion
- 10-15 Brussels Sprouts
- 1 Teaspoon of Olive Oil
- 2 Cups of Brown Rice (Prepared
- Green Onions for Garnish
- Prep your veggies by dicing the butternut squash, slicking the red onion and cutting the brussels sprouts into quarters.
- Once the veggies are ready, add the olive oil to a saute pan and pour in the veggies.
- Cook, stirring regularly for 10 minutes.
- Once the veggies begin to soften, add in the Better Than Bouillon Garlic and Seasoned Vegetable Base and stir.
- Add shrimp, continuing to stir regularly.
- Cook until the shrimp turn pink (about 5 minutes).
- Once the shrimp are cooked, spoon the shrimp and fall veggies over a bed of brown rice.
- Sprinkle green onions on top.
While this easy Garlic Shrimp and Veggies dish tastes like a dish that was cooked all day, it can actually be made in less than 30 minutes (totally score for those busy weeknights, right?). As an added bonus by using both Better Than Bouillon Garlic Base and Better Than Bouillon Seasoned Vegetable Base, it’s bursting with flavors that are just oh, so good!
To start this dish, I chopped up my veggies and added them to my saute pan with a teaspoon of olive oil.
As an pro tip, cut your veggies small enough where they will cook quickly but still provide a great bite each and every time. Once I had cooked my veggies for about 10 minutes and they were beginning to get soft, I added in a tablespoon of both of my Better Than Bouillon bases. With their spoonable form, these bases are a perfectly easy way to add flavor to my dishes and take so little effort from me while delivering big, bold flavors that make my meals taste like they have been simmering in seasoning all day long.
In addition to being so easy to use, each tablespoon of Better Than Bouillon is equivalent to a bouillon cube or broth. So where in the past I might have simmered down broth or added in to bouillon cubes, now I make it easy and simply add two tablespoons of seasoning that really make this dish shine!
As soon as I had stirred in my Better Than Bouillon seasoning, I added in my shrimp and cooked them just long enough for them to turn pink (about five minutes) all the while stirring my shrimp and fall veggies and making sure that the Better Than Bouillon flavor covered every bite.
Once my shrimp and veggies were cooked to perfection, I spooned the mixture over brown rice, making sure to add some of the amazing sauce that simply cooked the dish had created, and topped it off with green onions. *Inside Tip: Use a Tablespoon of Better Than Bouillon Chicken Base when cooking the brown rice to elevate this dish even more!
In less than 30 minutes, I had a flavorful fall meal ready that tasted like it had been simmering all day when in reality, it had been one of the easiest dishes I make all week!
